HUSSMANN CASES
Like Sterling is on Silver so is DANNEMAN to the grocery
business In Atlanta. It’s not unusual for three brothers, who
operate food stores here, to like the same thing . . . HUSSMANN
REFRIGERATED MERCHANDISING CASES.
Fred Danneman started off the purchase of a box car load
of Ilussman equipment by the three brothers, with the replace
ment of two top display cases to make it an all Hussmann
equipment store.
Milton, who operates the Danncmann Super Market, 11
Northside Drive S.W., Is remodeling and enlarging with the
latest type Hussmann self service and service displays while
Marcus, the third brother, will open a brand new store early
this summer at 466 Edgew'ood Ave.
It will be the last word in super market operation with
Hussmann steel shelving and gondolas and a complete line of
Hussmann self service meat, vegetable, dairy and frozen food
merchandisers.
Like other successful independent merchants Marcus also
will use closed display cases in his meat department for those
who desire personal meat cutting service.

We asked her for that recipe and
she promised it on condition that
her name be omitted—shy and
modest gal that she is! Here it
is with our combined best wishes.

Puff Paste (Blatterteig)
Section I:
11/3 cups butter
Vi cup sifted flour
Cut the butter into thin slices
before working these into the
flour on a kneading board. §hape
into a ball or form into a roll.
Place this in the refrigerator for
at least 30 minutes. When ready
for rolling out this pastry dough
and baking, as below, use a roll
ing pin to roll out dough to less
than a quarter of an inch thick
ness.
Section 2:
(Called Shtrudei Dough and used
with the Section 1 pastry dough)
1 Vi cups sifted flour
1 tablespoon lemon juice
1 egg
A pinch of salt
14 cup any white wine
2 tablespoons water
1 egg white
Combine flour with lemon juice,
egg, salt and the liquid, to make
a smooth paste, beating it well
with a mixing spoon or fork, till
it loosens from the beating spoon
or fork. Roll out this dough on a
lightly floured board to form a
rectange Y4 inch thick. Place the
rolled out pastry of Section 1 in
the center of this rectangle and
fold over from all four sides to
ward the center. Roll out deftly
into a rectangle about 16 by 10
inches, then fold over the two
short sides toward the center. Roll
out again and fold in the same
manner. Brush off loose flour
and let pastry stand about half
an hour in a cool room. Repeat
the above rolling out procedure
twice before cutting into forms
desired.
Plain Pastries are made by roll
ing out dough to V< inch thick
ness and cutting into squares,
circles or triangles and brushing
these with beaten egg white.
Bake on a foil lined cookie sheet
15 to 18 minutes at 500’ F or till
lightly browned.
Puff Pastries, with Preserve
Fillings. Cut the rolled out Puff
Paste into rounds about 2 inches
in diameter. With a knife cut Vi
inch strips of some cf the pastry
dough to form into rings the
same diameter. Brush the rounds
with beaten egg white, place the
rings of dough on same and
brush the rings with egg white.
Bake on foil lined cookie sheet
25 minutes at 500’ F. Place pre
serves in the centers and slip
under broiler flame for a few
seconds only.
Round Puff Pastries to be filled
with chopped nuts and whipped
cream, slightly sweetened and
flavored with rum, can be made
in the same manner. These cream
filled Pastries must be baked and
cooled before filling with the
whipped cream and served at
once.

Cheese Pastry Strips are made
by working into the dough about
*4 cup finely grated Cheddar
Type Cheese during the rolling
out process. Adding a dash of
paprika is a welcome variation.
Roll out the pastry dough to %
inch wide by 4 inches long. Form
these into loops, twist some into
bows or bake in plain strips 12
minutes at 500’ F or till lightly
browned. Excellent with fruit
salads.
