Former Atlantan, Now on Staff at U N,
Pays Visit With Mother and Grandmother
Miss Mary Tabachnick, a member of the staff at the United Na
tions, is shown with her grandmother, Mrs. I,ibby Kleinberg at the
Jewish Home in Atlanta. Miss Tabachnick at the time was visiting
her mother, Mrs. Max Butler, at 1361 N. Highland Ave.
A graduate of Girls Higli School, Miss Tabachnick studied at the
Atlanta Division of the University of Georgia and worked for a while
with the ADL office here before joining the staff at the United Na
tions.
She has served in various clerical capacities with the UN and
i urrently is on official duty as a hostess helping with preparations
for special conferences, delivery of material to the delegates and at
tending to other details once sessions get underway.
She had a part in September as a staff member helping handle
the 81-state atomic energy conference, which she described as the
largest “we've ever had and one of the most thrilling and interesting
ones for me. As far as bringing about world peace, I think it is the
most wonderful thing that our government has put forward.”

“My father-in-law who lives at
our house tells me that wonder
ful dishes were made of lentils
when he was a child in Russia
. . . and 1 would like to know
at least one dish 1 could make
to please him.” Remember the
Bible story — Esau selling his
birthright for a mess of pottage?
Those were lentils, no less! This
is the time of year when we
should include lentils in our diet
at least once a week, whether in
soup, as a starch element in a
main meal, or as a substitute for
meat. It is very nourishing in
any form. Here are a couple of
suggestions many of you will
relish, and Mrs. Greenberg’s
father-in-law may enjoy too.
LENTIL & POTATO SOUP
(with meat)
1 pound beef (any cut)
1 cup lentils
1 onion
2 teaspoons salt, approximately
2 medium potatoes, pared and
sliced fine
1 j cup thick tomato puree,
optional
Water as directed below
Meat selected should be pre
pared for cooking, cut into small
pieces and sauteed in a little oil
or vegetable shortening till light
ly browned on all sides. Use a
heavy frying pan for best results.
Rinse and drain the lentils. Com
bine prepared and browned meat,
lentils, onion which has been cut
into to release juices easily, and
1 l *i quarts of boiled water in a
soup pot. Salt to taste. Bring to a
boil quickly, skim well then re
duce heat to a mild boil and let
cook 45 minutes. Add potatoes,
tomato puree (or canned con
densed tomato soup) and con
tinue cooking 30 minutes or till
meat is tender. Remove cooked
onion before serving time, if de
sired. Thicken by pressing 1 cup
ful of the lentil and potato com
bination through a soup strain
er, stirring into the soqp. Garnish
with minced parsley and serve
with Tam Tams or croutons, pip
ing hot. Serves 4.
And here’s a dish that sticks-
to-the-ribs, too!
LENTILS & BARLEY
CASSEROLE (Milchig)
1 cup lentils, rinsed
1 j cup large barley, rinsed
Water as directed below
1 a teaspoon salt
1 onion, diced fine
2 tablespoons butter or
substitute
Cook lentils and barley in cold
water to cover over moderate
heat 45 minutes or till tender
enough to mash with a fork.
Add salt and enough boiling water
to prevent scorching and con
tinue cooking 10 minutes, while
browning diced onion in butter
or other shortening. Stir cooked
lentils and barley into the brown-
role. Bake at 350’ F.
15 minutes or till nicely browned
on top. Serve hot.
Serve^ 4.
Variations can be made by add
ing 1 cup stewed tomatoes (can
ned will do nicely), 1 tablespoon
dark brown sugar and a dash of
garlic powder. Let simmer till
liquid is absorbed, or turn into
casserole and brown.
Or, substitute Vs cup farfel
(packaged kind) for the barley
and cook as above, with or with
out tomato addition.
LENTIL-BURGHERS (Meatless)
1 cup lentils, cooked till tender
1 cup bran (packaged, 100%
kind)
1 onion, diced fine or grated
1 teaspoon salt
A dash of garlic powder
2 eggs
Minced parsley
4 tablespoons melted butter or
substitute
Drain cooked lentils and mash
well. Add bran, grated or diced
bnion, salt, garlic powder, slight
ly beaten eggs and minced pars
ley, mixing well with a fork till
the mixture can be handled with
the fingers to form into patties
like hamburghers. Dip each pattie
in a little flour or fine cracker
crumbs if desired, then fry till
browned on each side in a heavy
frying pan in which the shorten
ing has been melted. Good with
fish meals!

at 11 a.m. Sunday, November 11,
at the Shearith Israel Education

membership of Shearith Israel,
Beth Jacob and Or Ve Shalom
Congregations. Rabbi Sidney E.
Mossman will preside and Irving
Libowsky, past post commander,
will speak.
The entire community is in
vited to join the J.W.V. and the
congregations in cither or both of
these memorial services.
"This is the time to remember
those men who made the supreme
sacrifice that we might maintain
our freedom,” Chaplain Murray
Halpern, in charge of the pro
grams, said in his announcement.
Following the services a J.W.V.
committee will place new Ameri
can flags and markers on all
graves of Jewish veterans at both
Greenwood and Crest Lawn ceme
teries.

again hold Sabbath services at
the auditorium of Congregation
Or-Ve-Shalom on North High
land Avenue, N. E., on Friday
evening November 2 at 8:30 p.m.
Marvin Schoenberg will speak
on the "Biblical Portion for the
Week.” Arthur Schoenberg w-ill
conduct the services and, with his
wife, act as host for the Oneg
Shabbat to follow.
