Mizrachi Donor Luncheon at
12:30 p.m. Wednesday, Dec. 2,
will be Rabbi Harry H. Epstein,
spiritual leader of Ahavath
Achim Synagogue.
Rabbi Epstein, speaking on "Is
rael—the Land With the Forward
Look,” will tell of his visit this
past summer to that country
where he saw Mizrachi villages
and projects under the wing of
Mizrachi Women.

With apples plentiful at this
time of the year, use them in ev
ery way possible, as for instance,
in making Muffins for luncheon,
or to serve with fish or “milchig”
meals. Here’s our favorite recipe
for
Apple Muffins
1 cup sifted all-purpose flour
3 teaspoons baking powder
V2 teaspoon salt
Vi cup sugar
3 tablespoons vegetable short
ening
1 cup uncooked rolled oats
1 cup grated raw apple (pared
before grating on medium
grater)
1 egg
Vt cup milk
3 tablespoons dark brown
sugar
Vi. teaspoon cinnamon, optional
Sift together flour, baking
powder, salt and sugar into a
mixing bowl. Cut in shortening
with a wire blender or use two
knives till mixture is reduced to
coarse crumbs. Blond in the roll
ed oats and grated apple. Beat
egg lightly and stir in milk then
combine with first mixture. Ar
range fluted paper liners in muf
fin pans, small size preferred,
then fill to 2/3 full with brown
sugar, with or without cinnamon,
and bake 15 minutes at 425 deg.
F or till browned on top.
Yields 18 small muffins.
With cold weather just around
the corner, if not already arrived,
it’s a good idea to have plenty
of soup on hand in the refrigera-'
tor. We like the plan of making
the less tender fowl do double
duty—as soup basis and in a
special olive-chicken stew. We
strain the soup into quart jars
and store in the refrigerator.
When wanted, it is a matter of
minutes to heat and serve with
your favorite soup accessory such
as thin noodles, egg drops, tiny
Matzo Balls or boiled rice.
The boiled poultry sections
lifted from the soup can be con
verted into the following tasy
and different main fish. Here’s
how:
Chicken Sections With Olives
Bolied chicken sections of
large fowl
1 cup tomato juice (canned)
1 large onion, diced fine
1 stalk celery, cut fine, leaves
included
1 large carrot, diced
8 to 10 pimento stuffed green
olives
8 to 10 maslinas, pitts remov
ed Salt, pepper and paprika
to taste Parsley for garnish.
Heat a heavy frying pan and
saute the chicken portions till
lghtly browned on all sides, add
ing some oil or shortening if nec
essary. There should be suffici
ent fat in skin, however, to pre
vent scorching. Keep the heat
moderate and turn pieces of
chicken often. Add diced onion,
celery and carrot and stir in the
tomato juice. Turn into a casse
role or covered baking dish. The
The liquid should be sufficient to
almost cover contents. Cover.
Bake 30 minutes at 375 deg. F.

linas and whatever seasoning de

essary. Cover and return to oven,
reducing heat for 15 minutes or
till serving time. If a thick gravy
is preferred, mix 1 tablespoon
flour with 2 tablespoons cold
water and stir into the tomato
gravy along with the olives.
Serve piping not from casserole,
garnishing with parsley. Excel
lent with boiled rice, cooked thin
spaghetti or mashed potatoes.
Serves 6 to 8.
