Use speedy convenience foods for easy preparation of Raspberry
Flake Blits Torte and Meringue Flake Cupcakes.
Elegant party refreshments are
no problem for the hostess who
uses convenience foods in her
baking. A luscious dessert for
grown-ups—Raspberry or Straw
berry Flake Blitz Torte, and a
simple dessert for children—
Meringue Flake Cupcakes, can
be speedily made by using a
yellow cake mix, corn flakes,
pudding mix, and frozen rasp
berries.
It’s hard to believe that such
fancy-appearing and delicious
desserts are so simple to make.
Step-by-step directions are given
in the recipe.
In addition to convenience,
breakfast cereals, when used as
a recipe ingredient, make con
tributions of protein, important
B vitamins, essential minerals,
and food energy.
RASPBERRY OR
STRAWBERRY CORN FLAKE
BLITZ TORTE AND

1 package (1 pound 3 or 4
ounces)
yellow cake mix
4 eggs, separated
1/8 teaspoon salt
1 teaspoon vanilla
% cup sugar
3 cups corn flakes, regular or

pre-sweetened, finely crush
ed to make 1 cup crumbs
1 parkage (3*4 ounce) vanilla
pudding and pie filling
(not instant)
1 1-pound package frosen
raspberries or strawberries
defrosted
2 teaspoons cornstarch
Prepare cake mix as directed
on package, substituting 4 egg
yolks for the 2 eggs called for
on the package. Spread cake
batter over bottom of 2 greased
and floured 9-inch layer pans
and 12 muffin pans (2% x iy*
inches) lined, if desired, with
paper baking cups. Set aside
while making meringue. Beat
together egg whites, salt, and
vanilla until whites form soft
peaks. Gradually add sugar,
about 2 tablespoons at a time,
and continue beating until mix
ture is stiff and glossy. Fold in
cereal crumbs. Carefully spread
meringue over unbaked cake
batter. (Sprinkle lightly with
additional uncrushed corn flakes,
if desired). Bake in moderate
oven (350 degree F) until done,
about 25 minutes for layers, and
15 to 20 minutes for cupcakes.
Cool cake In layer pans 10 min
utes before removing. Cool on
racks meringue side up. Prepare
filling as directed on package,
using y« cup less milk than call
ed for in recipe; cool. Drain
raspberries and save juice to
make glaze. Add cornstarch to
juice, stir until smooth. Cook
until thick and clear, stirring
constantly. Cool partially. Spread
filling and half of the berries
onto one cake layer; cover with
second cake layer. Circle top
with remaining berries and driz
zle the berry glaze over berries.
Serve with additional berries or
berry sauce, if desired. Yield:
One 2-layer 9-inch cake or
enough for 12 servings, and 12
medium-sized cupcakes.

June is the month of sunshine
and home entertainment for
graduates, from elementary
school all the way to college.
And, there’s nothing like plan
ning ahead for such events. For
Uie “help-yourselves” table, it
is well to have variety of both
“spreads or dips” as well as
crackers. Tam-Tams. Sesame
Seed Crackers, small rounds of
thinly sliced pumpemickle or
rye (bread kept fresh by wrap
ping in aluminum foil and re
frigerating till serving time) are
most welcome and easiest to
handle. For decorative condi
ments. spear olives, small pic
kles. diced Cheddar Type
Cheese, with wooden or colored
plastic toothpicks and stick into
whole , grapefruits that have
been sliced att one end to pre
vent slipping. These are excel
lent with the following Milchig
Canape Spreads.
AVOCADO SALMON SPREAD
1 medium sise avocado
1 small can salmon (7% ounce
sise)
1 tablespoon rrated onion
\ teaspoon garlic salt
1 tablespoon lemon Juice
1 tablespoon olive oil (or veg
etable oil of your choice)
A dash of paprika
Bits of fresh dill or parsley
for garnish
Cut avocado lengthwise. Re
move pit. With a teaspoon scoop
out the pulp into a mixing bowl.
Add salmon after draining liquid
and mash well with a fork. Add
the rest of listed ingredients ex
cept garnish green bits. The mix
ture should be of a spreadable
consistency. If desired, use ca
yenne pepper in place of the
paprika for added “tart” and
“bite.” Just before serving time,
spread on rounds of rye bread.
Tam Tams or other crackers. A
bit of greens adds glamour—bits
of green pepper instead of above
greens. Yields almost 1 pint of
“spread. 1 *

Combine 8 to 8 ounces cream
cheese with % cup mashed avo
cado. Season with lemon juice,
enough to make the desired con
sistency for spreading. Work in
2 tablespoons finely chopped

with straws for easy serving.
