alongside the haute couture

was provided by Pnina Salzman, |
the Israeli pianist who was on
tour here as soloist with the Is
rael Philharmonic Orchestra. For
her Carnegie Hall appearance,
she chose an off-the-shoulder
gown of white brocade which eli
cited as much admiration, at
least by the women in the audi
ence, as her .fine musicianship.
At the final American concert
of this orchestra at Hunter Col
lege, she wore a strapless gown
of American beauty rose, a per
fect complement for this dark-
sired Israeli beauty. Both gowns
from Israel.

Speaking of the Israel Phil
harmonic, it was heartening to
see women musicians so gener
ously sprinkled throughout the
orchestra. In this regard, our
own orchestras, at least some of
the major ones, might take notice.
Why, in this enlightened day and
age, do they still close their doors
to women?

Elizabeth Taylor called on her
friend Marilyn Monroe and asked
her for a recipe for Gefillte Fish.
Marilyn kindly obliged. A few
days later Elizabeth called and
raved about the recipe. “Was it
your own invention?” she asked.
“Of course not,” replied Marilyn,
“I got it from May Britt Davis.”

Recently as I was popping a
souffle into the oven, the tele
phone rang. It was Gerard Sou-
zay, the great French baritone.
He wanted me to check his
pronunciation of some Hebrew
songs that he was going to sing
in his Town Hall recital in New
York that weekend. So for a few
entrancing moments I had the
pleasure of a private recital on
the telephone by the world-famed
singer. So what if the souffle
burned? It was well worth it.

in the Miss World contest in Lon
don recently, arrived in Israel

GREEN BEANS SALAD
1 pound green beans, sliced
diagonally
Cold water to cover
1 teaspoon salt
V& enp sliced onions
% cup cider vinegar
M enp cold water
y 2 cup dark brown sugar, or to
taste
1 teaspoon mustard seeds
Remove stem and blossom tips
from green beans and slice dia
gonally into 1-inch pices. Cover

with cold water and bring to a
boil. Add salt and cook only till
tender enough to pierce with a
fork while still green in color.
Drain, add sliced onions, vinegar,
cold water, brown sugar to taste
and mustard seeds. Bring to a
boil, cover and let stand till cold.
Store in a glass container. When
serving, add mayonnaise or
French dressing in any desired
quantity and serve on a bed of
lettuce or other salad greens.
Serves 8 or more.
CHESTNUT CAKE
(serves 1® or more)
1 pound chestnuts
6 tablespoons vegetable
shortening
2/3 cup sugar
1 teaspoon vanilla
6 eggs, separated
1 cup flour
1 teaspoon baking powder
Cut shells of chestnuts with a
sharp knife, one or two slits, and
cover with boiling water. Cook
over moderate heat 20 minutes or
till tender. Drain. Remove shells
and skins. Press through a sieve
or ricer and add just enough fruit
juice of your choice to make the
puree of consistency of mashed
potatoes. Cream shortening and
sugar, add the puree and flavor
ing and beat thoroughly, addiryj
one egg yolk at a time while
continuing beating. Beat egg
whites in a separate bowl till
fluffy and fold into the mixture
with a fork. Sift together flour
and baking powder then sift into
the combined chestnut puree and
creamed mixture, folding in with
a fork without beating. Turn
mixtufe into a well greased and
flour-dusted 13 x 9 x 2-inclv bak
ing pan that has been lined with
wax paper or aluminum foil then
greased. Bake 40 minutes at 350
degrees F. or till a wooden tooth
pick inserted in center comes out
dry. Cook 10 minutes before turn
ing out on a wire rack and re
moving paper or foil. Turn back
on a cutting board. Cut into 10 or
more even portions. Dust with
confectioners sugar, or garnish
each portion with a bit of con
fectioners’ sugar and fruit juice,
topping with bits of nuts or
maraschino cherries.

shortly after the war, a little
Jewish orphan of five years. She
had been found in the rubble of
the Warsaw ghetto by a Polish
family who hid her during the
war. The name “Gila'Golan” was
given to her by the Israeli au
thorities, but her real name or
lineage remains unknown.
Only Jennie Grossinger would
include in her “Art of Jewish
Cooking” such well-known Yid
dish specialties as “Seafood New-
burg” and “Chicken Chow Mein.”
Please don’t misunderstand—the
necessary ingredients could easily
pass the Kashruth requirements
of the Union of Orthodox Rabbis.
There are plenty of recipes for
kishke, knaidlach, and kugels,
not to mention herring forshmak,
for those that do not wish to
stray from the delectable if heart
burning narrow.
As if Israel is not currently
embroiled in enough jurisdic
tional disputes over Eichmann,
Lavon, et al, it recently applied
its famed legal arm to an area
where even angels fear to tread.
A recent court decision enjoined
a married man from seeing his
sweetheart. Don’t they know that
there seems to be an interna
tional gentlemen’s agreement re
garding philandering, namely,
that the only crime is in being
caught?

My last column was devoted
exclusively to Mrs. Isaac Stem,
a tireless worker in a great many
different areas. Last week New
Yorkers were heartened to read
that single-handedly she had
saved “The Wall,” the great play
adapted from John Hersey’s
monumental work on the War
saw ghetto uprising, from clos
ing down because of lack of
funds. When she read of the im
pending closing of this play, she
immediately got on the phone,
and within 48 hours had rised the
necessary $20,000 to keep it on
the boards. Her enthusiasm in
spired many others connected
with the play to make some sac
rifice in order to inform a new
generation of one of history’s
ultimate examples of mans in
humanity to man, and courage in
the face of despair.
