COOKING for PESACH

The ancient and beautiful festival of Passover, oldest of Jewish
holidays, has been celebrated for over three thousand consecutive
years.
As Pt.. ->vor is the joyous week which celebrates the end of a
dark era of slavery for the Israelites, so it is the holiday celebrat
ing the beginning of liberty and freedom for all Jews. The Pass-
over season of eight days of family feasting is undertaken with
high purpose and seriousness by all Jewish homemakers. It is a
time of change ... a time for the family, house and kitchen to
display new clothes, new furnishings, new saucepans and utensils.
It is spring!. The winter has gone; a fresh, new look for everyone
and everything is a necessity. ~~~ _ -
There is a “change” in the menus, too. The definite restrictions
regarding the use of leavening (and certain foods) makes menu
planning more interesting (and more demanding, too) than at any
other period of the Jewish year.
As a result of the Passover restrictions, it is of the utmost im
portance to the Jewish housewife to cook dishes that are not only
delicious but that are also confined within the framework of Pass-
over regulations.
Naturally, every woman of the house wants the eight days of
menus to be appealing to the eye, the appetite and her pocketbook.
In keeping with the holy laws and age-old Passover traditions,
trained home economists are constantly developing new and delec
table recipes that completely meet the requirements of the special
Passover dietary laws.
Here is such a recipe, ideal for your use during the eight days
of Passover. It has been especially prepared by Deborah Ross
in the famous test kitchens of the B. Manischewiti Company.
MOCHA SPONGE CAKE
1 box Passover Sponge Cake 6 eggs, separated
Mix *4 cup water
2 tablespoons instant 1 bar (1-3/8 ot.) bittersweet
coffee powder chocolate, grated
Stir instant coffee powder into package of mix. Combine and
bake as directed on box. While folding in beaten egg whites,
add the grated chocolate. Frost, if desired, with Coffee Fluff.
COFFEE FLUFF
2 ogg whites, unbeaten 1 tablespoon instant
1(4 cups brown sugar coffee
5 tablespoons water Dash of salt
Dissolve instant coffee in the water. Place all ingredients in
top of double boiler over rapidly boiling water. Beat constantly
with hand or electric beater until frosting stands in a peak on
beater. Spread on cake. Garnish with walnut halves.

Klutznick Named
US. Delegate by JSK

WASHINGTON, (JTA) —
President Kennedy this week
designated Philip M. Klutznick,
American Jewish leader and
United States Representative in
the United Nations Economic and
Social Council, to serve, in addi
tion to his duties on the Coun
cil, as a member of the U.S.
delegation to the 15th session of
the UN General Assembly which
opens next month. The Senate
confirmed the appointment
promptly.
Mrs. Eleanor Roosevelt was
afro named to the five-member
delegation. The five names were
sent to Congress by the White
House. The other three are Am
bassador Adlai Stevenson;
Charles W. Yost, Deputy U.S.
Representative in the UN Se
curity Council, and Francis T.
P. Plimpton, Deputy U.S. Repre
sentative to the United Nations.

JOHANNESBURG, (JTA) —
Israel Maisels, a prominent bar
rister and a leader of the South
African Jewish community, will
become a judge of the High
Court of Southern Rhodesia, ef
fective next May, it was an
nounced here. Mr. Maisels, 55 is
a former president of the South
African Board of Jewish Depu
ties.
WASHINGTON, (JTA) — A
bill providing for the establish
ment of a memorial to Albert
Einstein to be built in the Dis
trict of Columbia, was intro
duced in the Senate this week
by Senator Jacob K. Javits, New
York Republican and Senator
Hubert H. Humphrey, Minnesota

Of Immigration Law,
To Quit Congress
WASHINGTON, (JTA)—Chair
man Francis E. Walter of the
House Immigration Subcommit
tee, co-author of the controver
sial McCarran-Walter Immigra
tion Act, made known this week
that he will retire from Congress
after the current session, thus
removing a principle bottleneck
in efforts to liberalize immigra
tion law.
Rep. Walter, Penn, Democrat,
said he would not -seek re-elec
tion because of ill health. This -
is his 15th term in Congress. His
successor as chairman of the un
controlled immigration and na
turalization policy. ■ f
