SUKKOT MENU
"Zei a mench, vest du essen in Sukkah.” How that portentous
admonition, drilled into us during the perceptive childhood years
is ever present in our memories and, no doubt, has often guided our
conduct.
It made us feel grown-up and an equal of the adults to be
treated thus. Sukkot comes on the 15th day of Tishri, following
Yom Kippur, and for eight days we ate in the outdoor Sukkah
decorated with evergreen branch roofing and fruit hanging from
the rafters. In the ancient days in Palestine it was a time of
rejoicing for the harvest was in; the families came to Jerusalem
and camped in sukkahs on the hills surrounding the Temple. The
meals were festive ones-

STUFFED ROAST TURKEY
Stuffing:
1 Turkey liver, broiled and chopped 8 cups stale breadcrumbs
2 onions diced 2 carrots
1 cup sliced mushrooms y 4 cup chopped parsley
Saute onions and mushrooms in turkey fat or about V\ lb.
margarine, and add chopped liver, breadcrumbs and parsley and
stuff a 12 to 15-lb. turkey loosely. Sew up cavity of turkey which
has been washed thoroughly inside and outside. Truss wings and
legs close to body. Cover turkey well with margarine and place
breast down on a rack in a roasting pan. Roast at 500-dgrees for 20
minutes. Add one cup stock in which giblets have been cooked.
Add 2 stalks of celery with leaves and 2 carrots cut in chunks. Reduce
oven to 350-degrees and continue to roast, basting frequently with
pan juices until turkey is done (which should be 18 minutes per
pound). Turn turkey up the last hour to brown breast.
Gravy:
In a pot on top of stove add sieved, all but 2 tablespoons of
fat in which turkey was roasted. Add 2 tablespoons flour and cook
until flour is light brown. Add all the brown bits from the bottom
and sides of the pan in which turkey was roasted. Stir in 2 cups of
stock in which giblets cooked and boil and stir constantly. Season
to taste.
SWEET POTATO AND PRUNE TZIMMES
1 lb. prunes 1 cup brown sugar
2 lbs- sweet potatoes 2 tablespoons lemon juice
1 teaspoon salt 1 tablespoon margarine
On bottom of casserole put a layer of sweet potatoes, halved
and peeled. On top of that add a layer of prunes and then repeat.
Add water to cover slightly. Add salt, sugar, lemon juice and
margarine. Bake in a 325-degree oven until tender. Keep casserole
'covered partly and do not stir. Should be finished in about one
hour. Add more water if necessary.
