WHAT'S
COOKING
Stuffed Cabbage—A
Traditional Simhat
Torah Dish
By RUTH SIRKIS
Simhat Torah is a holiday that
is always eagerly welcomed. It
is a time of joy and laughter,
of dancing in the Shul with the
Torah, and of small children
carrying little flags with apples
on them. In the kitchen it is the
time for traditional goodies. Stuff
ed vegetables, and especially
stuffed cabbage, are prepared
and served.
1 pound ground beef
cup bread crumbs
1 large onion chopped
1 egg
1 clove mashed garlic
1 head of cabbage
2 Tbls. oil
1 tsp. salt
L tsp. pepper
2 cups tomato juice plus
1 beef-boullion cube
2 Tbls. sugar
juice from 1 lemon
1. Dip the cabbage head in a
big pot of boiling water. Take off
the heat, cover and let soak till
you prepare the filling.
2. Prepare the filling: Fry the
chopped onion in the oil. Add
to the ground meat. Add also the
eggs, the bread crumbs, the mash
ed garlic, salt and pepper. Mix
well.
3. Take the eaggage out of the
hot water. By now the leaves are
tender. They will separate easily
and also could be rolled. Drain
the cabbage and separate the
leaves carefully.
4. Grease a big saucepan. Put
filling on every leaf and fold it
like an envelope or roll it so
that the filling will not spill out.
Put the stuffed leaves, very close
together, in the saucepan.
5. Combine the tomato juice
with the beef-boullion cube. Add
the sugar and lemon juice. Pour
over the stuffed cabbage in the
saucepan. Cook for about an
hour on moderate heat.

THE VICE MAYOR’S JOB ISN’T JUST
TO PINCH HIT FOR HIS HONOR!
The Vice Mayor does a lot more than stand in for the
mayor when his honor has to be two places at once. And
even though the Vice Mayor is just a heartbeat away from
mayorship of over 500,000 people, there’s more to the job
than that.
Atlanta’s city charter says that the governing body of our
town is the Board of Aldermen. That's where the crucial
decisions that effect the lives of every Atlantan are made.
And guess who’s the President of the Board of Aldermen.
The Vice Mayor, that’s who.
To preside over this body of 18 independent-minded men
takes skill, diplomacy and experience. Milton Farris has all
those qualities in abundance. He’s got something else, too.
The respect of the Aldermen. And that’s mighty important
when you figure that the Vice Mayor’s chief tool is his
ability to persuade.
Milton Farris has spent 18 years being one of the best
Aldermen any city ever had. He’s served on almost every
Aldermanic committee . . . been Chairman of all the im
portant ones. He’s helped build one of the nation’s greatest
library systems . . . worked for fairer taxation . . . traffic
improvements . . . better services . . . and forward-looking
planning. He negotiated the successful end of the firemen’s
and sanitation workers strikes.
The Vice Mayor’s job is no place for on the job training.
It’s no token post. The job’s important. So is your vote.
Vote for Milton Farris for Vice Mayor.
