WHAT'S
COOKING

Non-Hake Delicious
Cake
This dessert cake is known
as “Charlotte” or “Diplomat”—
and is outstanding with either
name. It is made in a mold
lined with lady-finger cookies
and is filled with a mousse-y
concoction that actually melts
in your mouth. Little pieces of
dried candied fruits are nestled
in there, adding flavor, texture
as well as color. We have tried
this classic non-bake cake with
the non-dairy type of whipped
cream with good results. This
means that you can serve it at
the end of a “meaty” dinner.
One-quarter cup orange
liquor
One-half cup pieces of dried
candied fruit
Forty-eight lady-finger
cookies
One cup milk (or non-dairy
One-third cup cold water
“milk”)
Five egg yolks
Two cups whipping cream
(or non-dairy
“whipping cream”)
One-third cup sugar
One-and-one-half this,
gelatin
One this, all purpose flour
1. Cut the candied fruit into
very small pieces. You can use
dates, figs, raisins cherries and
orange rind. Soak the fruit in
the orange liquer.
2. Put the gelatin in the one-
third cup of cold water to sof
ten.
3. Whip the egg yolks with
the sugar till bright in color and
thick. Add one this, of flour
and beat together. ,
4. Bring the milk to a boll
and add it in a slow stream to
the eggs while beating. Add the
softened gelatin. Put the mix
ture on a very low heat or bet
ter yet, on a double boiler.
Bring to a very gentle boil while
stirring constantly. Over-boiling
could cause the eggs to curdle.
It is ready when the gelatin dis
solves completely and the mix
ture gets thickened and covers
a metal spoon.
5. Take off heat and pour to
a clean bowl through a fine
sieve. Let cool.
6. While the egg mixture is
cooling, line the mold with the
lady-fingers. Use an eight-and-
a-half-inch spring form. Line
the bottom with a round piece
of wax paper. Line the bottom
with lady fingers. Cut some of
them diagonally so they look
like long triangles. Arrange

them on the bottom of the mold
with the wide side towards the
center. Line also the sides of
the mold, with lady fingers
standing upright.
7. Whip the whipping cream
till it holds its shape.
8. Add the completely cooled
egg mixture, the liquer-soaked
fruit, together with the liquor.
Stir gently. Fold in the whipped
cream, leaving about one-quar
ter of it for garnishing. Fold
only till there is no trace of the
whipped cream.
9. Pour half the mixture into
the lined pan. Arrange another
layer of lady-fingers This layer
does not have to be in perfect
order. Pour the rest of the mix
ture and arrange the rest of
the lady-fingers on top. Cover
with wax paper.
10. Chill overnight. To unmold,

I receive the Southern Israel
ite every week and find it very
good reading, and also enjoy
making most of the recipes. A
few weeks ago there was a
recipe for Halvah cake. I made
it and it came out very well.
Everyone liked it for quite a
long time now. I have been
trying to find a recipe for Hal
vah candy but no one seems to
have it. If by any chance you
have one, would you please be
so kind and print it in The
Southern Israelite? I’ll be
watching for it. Thank you very

At first we thought Mrs. LHO
had to be kidding. Halvah IS
“candy.” So how could you
make Halvah candy? Does she
mean how to make Halvah?
Perhaps one of our readers has
the recipe for “Halvah Candy.”
Doubtlessly, someone engaged
in the mystiques of cookery
more than thh writer under
stands such nuances. We'll glad
ly print the recipe and share
it with all. Halvah Cake, we’ll

P.S. Never was there a bet
ter gambit for something per
sonal. As a youngster, we liked
to kid Grandma “Gitsy” Rosen
berg, of blessed memory, who
once in a while received a pack
age from a relative in a big dty.
Inside, among many things, was
Halvah. The label suggested
origins in distant and in the
20’s inaccessible Turkey. What
nine-year-old in those days
knew from importing or ex
porting': 1 Also some kind of de
licious gum candy, which had
such a delicious aroma it could
have been flavored with per
fume. The slivers of Halvah,
Grandma Rosenberg would mete
out to any eager grandchildren
that got underfoot.. There al
ways seemed to be a handful.
“Why it tastes wonderful—just
like ground-up peanut shells,
but much sweeter,” we’d say
without batting an eye. Grand
ma didn’t seem to mind. The
test of appreciation was the
way the slivers disappeared.
Not the words or lip-smacking
that came later. There was quite
a heap of peanut shells around
Albany, Ga., almost as many
as the pecans for which the
section was —and is— famous.
But nobody I ever knew ever
experimented to see if Halvah
would happen as a byproduct.
