CWHATS COOKING?
By RUTH SIRKIS
Armenian Cookbook
A new cook book was just re
cently published and I was very
eager to leaf through it . . . The
book is called “The Art of
Armenian Cooking” by Rose
B a b o i a n (Doubleday & Co.,
Inc.), and has about two hun
dred recipes of Armenian dishes.
Mrs. Baboian explains that the
Armenian kitchen was influ
enced by Russian, Turkish, Jew
ish and Arab cuisines. And in
deed I found there many recipes
that are well known in Israel,
which can be explained by sim
ilarity of sources of influence.
Some of my favorite sweets,
candies and cakes can be found
in the book like Paklava, Lok-
oom, Kadeyif and Mamoul (rec
ipe given here.)
However, I do have some re
marks about the way the book
iS' put together. I didn’t care
too much for alphabetical order
of dishes which puts desserts be
fore stews, and cakes before
main dishes. I. also have res
ervations about the way the in
gredients are listed in the rec
ipes. They are not clearly mark
ed and it takes some time to
know what ingredients you
ba?8 to buy or prepare. Here is
a recipe for cookies I remember
eating in Israel—the way It is
given in the book:
~ “ ALEPPO MAMOUL
Bake at 378 degrees for 18
minutes (makes about 3% doz
en). Place in large mixing bowl
2 cups semolina flour or farina
or quick cream of wheat (sem
olina may be purchased from
Near Eastern stores).
Stir in 1 cup melted warm
sweet butter or margarine and
6 tblsp. warm milk. Let it stand
for 1 hour.
Mix in 1% cups sifted flour;
y« cup sugar; and V* cup short
ening. Knead until well blend
ed.
Cut dough into walnut-sized
pieces. Shape as a cone. Then
shape a hole in each piece. Fill
with 1>£ tsp. nut filling (given
below).
Arrange 2 inches apart on un
greased baking sheet. Bake in
quick moderate oven (375 de
grees) for about 15 minutes
until inamouls are firm. Sprin
kle confectioners’ sugar on a
baking sheet. Place hot mamouls
over sugar. Then sprinkle con
fectioners’ sugar generously on
tops of mamouls, or spread
marshmallow fluff on mamouls
instead of confectioners’ sugar.
NUT FILLING
Mix together 1 Vi cups finely
chopped walnuts, 2 tbls. sugar;
1 tbls. cinnamon and 1 tbls. but
ter.
