District 5 B’nni it'rith Youth
To Convene at CSC
The third annual District
Five B’nai It’rith Youth Organ
ization Leadership Training
Conference (DLTC) is to be
held June 15-21 at the Univer
sity of South Carolina. Judaism
specialists, leadership trainers,
and cultural artists will guide
the 180 BBYO leaders and po
tential leaders toward greater
awareness of themselves as
Jews, as future community
leaders, and as unique person
alities.
Although originally limited to
150 participants, the response to
this year’s program was so
overwhelming according to Ron
ald T. Cahn, District Five BBYO
director and staff coordinator
of the leadership program that
they extended the limit and ex
panded the staff to accommo
date more youth.
Chapter, council, regional and
^district representatives from an
area stretching from Baltimore
through Miami and including
Atlanta, will meet in Columbia,
S C., where they will be housed
in the new Capstone residence

Judaism, leadership techniques,
BBYO programming, communi
cation skills, Israeli dance,
Jewish music, and Jewish wit,
the youth will transact District
five BBYO business.
Outgoing 1971-72 District Five
presidents, Miss Shelley Zueker
of Miami, and David Meltzer of
Orlando, will conduct the busi
ness meetings and election of
the 1972-73 district officers.
The two District Five vice
presidents for 1971-72 who
have served as DLTC youth co
ordinators are Bonnie Rosen of
Columbia and Wallace Fishbein
of Charleston,
The program’s Judaism staff
will include Rabbi Robert Sie
gel, director of the Hillel Foun
dation at the University of
North Carolina, Mrs. Ruth Can
tor. northern region director of
BBYO, Larry Schwartz, educa
tion director of the Temple, At
lanta; Joseph Edelheit, fourth-
year student at Hebrew Union
College, and Rabbi Victor Mal-
lenbaum, who recently com
pleted his doctorate in psychol
ogy from Georgia State Uni
versity.

Artichokes With Creamy Sauce
Artichokes are a very strik
ing and delicious vegetable.
When placed on individual
plates to be served as fiust
course, they look like flowers
and actually decorate the table.
Put creamy sauce in small indi
vidual sauce plates and direct
your guests to dip the leaves
in it.
One Artichoke Per Person
Six-Eight medium artichokes
Eight cups water
One this, salt
Two this, oil
Two this, lemon juice
One this, snipped parsley
Creamy Sauce:
Twelve oz. mayonnaise (ID
cups)
Four this. lemon juice
Three this, snipped parsley
One garlic clove, mashed
1. Choose medium-sized arti
chokes of bright, green color
with leaves tightly closed. Use
a big pot, preferably of stain-
less-steel. for cooking.
2. Prepare the artichokes; re
move the stems and cut off
the tips of the leaves with scis
sors. Rub all the cut places with
lemon juice to prevent discolor
ation.
3. Arrange the artichokes in
the big pot, putting them in an
upright position, very close to
one another. This helps keep
their shape. Cover the arti
chokes with the water (add
more, if necessary, to cover
completely). Add the salt, oil
and lemon juice. Cover the pot

Gus B. Kaufman Honored
At Macon Bond Dinner
Gus B. Kaufman of Macon
was the recipient of the State of
Israel Shalom Award at a din
ner held in his honor on Sun
day, June 4. at the Idle Horn
Country Club in Macon.
Kaufman is the first Maeonite
to receive the award, which is
presented by the State of Israel
in appreciation not only of work
for Israel, but work in the re
cipient’s community.
The Macon-Israel Dinner of
State, which featured entertain
ment by Joey Adams, was in be
half of the Israel Bond drive.
Leonard Kaplan was chairman.
Kaufman, president of G.
Bernd Co., is also president of
Temple Beth Israel. He is a
former chairman of the Macon
Jewish Federation, former
chairman of Macon Bonds for
Israel, past president of the
Macon Little Theater, chairman
of the Piedmont District, Boy
Scouts of America and holder
of the Silver Beaver Award.
He attended Lanier High
School, the University of Geor-
gi and Mercer University. He
has served on the board of di
rectors of the Macon Aid Soci
ety and of Booker T. Washing
ton Community Center and the
Macon Nursery School. Kauf
man has also served as state
and local co-chairman of the
United Jewish Appeal, of which
he is a state cabinet member
and has been active in the
American Jewish Committee. ■

and cook for 30 to 40 minutes,
until an inside leaf may be
pulled off easily.
4. Remove the artichokes
from the pot and turn them up
side down in a colander, for
about 15 minutes, or until all
the water has drained off.
5. After the artichokes cool,
open the center of each very
gently with your fingers. Re
move some of the center leaves
to form a cup. Now that the
opening is broader remove the
"chokes,” the inedible fuzzy
part, with a teaspoon or grape
fruit knife.
(1. Prepare the sauce by mix
ing ingredients together. You
can do this ahead of time and
keep it in the refrigerator. Stir
again just before serving. Put
the sauce in very small dishes
to be placed near each person.
7. To serve the artichokes,
stand each upright on a salad
plate. You may have to spread
some of the bottom leaves to
support the artichokes in a
standing position.
