TOTS Has “Sound of Music
The Odd Couple” Next
Author Neil Simon, a favorite
with Atlanta audiences, has hia
second representation of the sea-
aon for Theater of the Stars,
when “The Odd Couple” opens
August 8.
The blockbuster of a comedy
will be TOTS’ non-musical of
the season and stars Tony Ran
dall and Jack Klugman recreat
ing their roles as the “sloppy
joe and the dapper dan” who
try to live together. “Odd Cou
ple” runs through August 13.
An additional Sunday night
performance at 8 o’clock has
been scheduled for August 13.
Continuing through August 6
at the Civic Center is the en
chanting musical “Sound of
Music,” with Ann Blyth. The
adventures of the Trapp Fam
ily Singers, extolled in songs on
both stage and film, includes
such favorites as “Climb Every
Mountain,” “Do Re Mi”, “My
Favorite 'phings, and the
charming title song.

WHATS COOKING?

Lemon Meringue Pie
Summertime calls for refresh
ing tangy desserts. We offer
here a classic one — lemon
meringue pie with its tart, lem
ony flavor. The dessert consists
of a flaky pie crust that is pre
baked then filled with a smooth
delicate filling. All is topped
with soft peaks of white
meringue, adding glamor and
tenderness. It is quite a popular
dessert among my readers, since
several have requested the rec
ipe. So here it is.
The pastry shell (9”)
One cup sifted all purpose
flour
One-half tsp. salt
One-third cup vegetable
shortening
2-3 tbls. cold water
1. Sift the flour and salt into
a bowl. Cut in the shortening
and then rub between your
hands till it resembles small
peas. Sprinkle the water and
toss with a fork until it clings
together. Roll out on a lightly
floured surface to a 12-inch cir
cle. Transfer to a pie plate and
trim the edges. Prick with a
fork and bake at 450* for 12-15
minutes. Remove from oven
and cool.
The filling
One-and-one-half cups sugar
One-third cup corn starch
Dash salt
One-half cup fresh squeezed
lemon juice
One-half cup cold water
Three egg yolks, well beaten
Two tbls. margarine
One-and-one-half cup boiling
water
One tsp. fresh grated lemon
peel
Few drops yellow food color
ing
The meringue
Three egg whites
One-quarter tsp. cream of
tartar
Six tbls. sugar
1. In a saucepan mix sugar,
corn starch and salt together,
with a wire whisk.
2. Still using the whisk, grad
ually blend in cold water, then
lemon juice until smooth. Add
beaten egg yolks, blending very
thoroughly. Add margarine.
3. Add boiling water gradu
ally, stirring constantly with
rubber spatula.
4. Gradually bring mixture to
full boil, stirring gently and
constantly with spatula over
medium heat. Reduce heat
slightly as mixture begins to
thicken. Boil slowly for one
minute.
5. Remove from heat and stir
in grated peel and food coloring.
7. Pour hot filling into baked
pastry shell. Let stand, allowing
a thin film to form while pre
paring the meringue.
7. Beat the whites for several
seconds until frothy. Add cream
of tartar and beat on high speed
until forming soft peaks. Re
duce speed and add the sugar
one tbls. at a time. Return to
high speed until whites are
fairly stiff but still glossy.
8. Place meringue on the hot
filling in several mounds, then

10. Bake at 350“ for 12-15
minutes, until golden brown.
11. Cool on wire rack at room
temperature away from drafts
for two hours before cutting
and serving. Use a sharp knife
and dip into hot water after
each cut, for easier serving.
