PITA
My last recipe told how to make
felafcl balls. Now how about try
ing your hand at making pita, the
Middle Eastern bread? The pita
may be filled with felafcl and salad
and techina (ground sesame seed
sauce) to make a traditional
Mideast sandwich or used simply
like a roll fpr any kind of
sandwich. My family enjoys eating
hamburgers in them. Remember, a
very hot oven is essential for bak
ing the pita.
I oz. fresh yeast I */z tsps. salt
I tsp. sugar
I'A cups lukewarm water
4V> cups (lour (approx.)
Dissolve yeast and sugar in the
lukewarm water. Put flour and salt
in a large bowl. Make a well in
center and add the yeast mixture.
Knead thoroughly until dough is
smooth and elastic. Divide the
dough into 24 balls. Place on un
greased cookie sheets, cover with a
clean towel and let rise 30-40
minutes in a warm place.
Roll each ball into a fairly thin
pancake about 'A of an inch thick.
Place on ungreased cookie sheet
and let rise 20-30 minutes in a
warm place. Place each cookie
sheet in a 500-degree pre-heated
oven for 2 to 3 minutes. The pitas
will get puffy, forming a pocket
which can be filled. Do not let pitas
get brown. Freeze in plastic bag
and reheat frozen just long enough
to warm. Unfrozen and stored in
plastic bags they’ll keep a few
days. Copyright JTA, 1975
