Pareve
Refrigerator
Yeast Dough
Not too long ago, I published a
recipe in this column for a
refrigerator yeast dough using sour
cream. Judging by the response I
received, the recipe was a popular
one. Now I’d like to pass along to
you another refrigerator yeast
dough recipe — this time one that
is pareve.
1 oz. fresh yeast
‘/i cup warm water
2 sticks margarine
3 tblsps. sugar
3 egg yolks
V/» cups flour
'A cup liquid non-dairy
creamer
3 egg whites
1 scant cup sugar
1 '/2 cups nuts, chopped
I cup chocolate chips
(miniature)
Dissolve yeast in warm water.
Cream margarine, sugar and egg
yolks. Add yeast, creamer and
floqr. Mix well. Cover and
refrigerate overnight.
Divide dough into two balls.
With floured hands, on a well
floured board, roll each ball into a
fairly thin rectangle. Beat the egg
whites until stiff, then gradually
add sugar and beat until all is
blended.
Spread one-half the egg whites
on each rectangle.
Put the V« cup nuts and 'A cup
chocolate chips on each. Roll like
a jelly roll. Place each roll in a
greased tube or bundt pan, with
the rolled edge down, and pinch
together. Make sure your roll is
uniform in thickness or your cake
will be uneven. Cover and let rise
in a warm place for I'/« hours.
Bake at 350 degrees for 50
minutes, „ i. ,
