Drumsticks in Wine
Chicken drumsticks make a fine
“finger food” to serve at a buffet.
They can be made ahead of time
and frozen when needed. Reheat
frozen in a preheated oven until
hot—or in a microwave for five
minutes after it has defrosted. In
either case, the marinade should be
frozen separately, defrosted and
then poured over the drumsticks
before they are preheated. If there
is not enough liquid for reheating,
mix % cup of additional white wine
with '/« cup of water.
3 lbs. chicken drumsticks
Vi cup lemon juice
1 /3 cup white wine
1 clove garlic, crushed
% tsp. thyme
V* tsp. onion powder
paprika
Mix all ingredients together
(except paprika) and pour over
chicken. Marinate two hours in
refrigerator. Take chicken out of
marinade, sprinkle with paprika
and broil until a light brown,
turning the drumsticks so all
surfaces are browned. Arrange in
a single layer in a shallow roasting
pan, pour marinade over all pieces
and bake at 350degrees for about I
hour, hasting several times. Serve
warm with its gravy. Figure on I to 2
drumsticks per person, depending
on what else you are serving. «
Chinese Spare Ribs
To make kosher Chinese “spare
ribs,” use either lamb or veal ribs
Ask your butcher to cut the ribs
into strips. For tenderness and
flavor, they should be marinated
overnight
2 lbs. lamb or veal ribs
1/3 cup brown sugar
2 Tbsp. soy sauce
V 4 cup catsup
V 4 cup water
1/3 cup lemon juice
Mix brown sugar, soy sauce,
catsup, water and lemon juice and
simmer for 15 minutes. Pour over
ribs and marinate in refrigerator
overnight. Broil ribs 10 minutes on
each side. Drain fat. Bake in
remaining marinate 2/ 4 hours al
350 degrees or until tender. Baste
frequently.
Beef and Vegetable Soup
Here is a hearty all-in-one dish
which can be prepared ahead and
frozen for several meals. It should
be refrigerated overnight so the fat
can be removed.
Vj lb. marrow bones
3 lbs. short ribs
1 tblsp. salt
14 cups water
1 small cabbage thinly sliced
2 medium onions, diced
8 carrots, diced
2 stalks chopped celery

WASHINGTON (JTA)—The visit by Saudi Arabian Crown
Prince Fahd to the U.S. scheduled for Feb. 19, has been postponed
at Fahd’s request and will be rescheduled “at an early, mutually
agreed upon time,” the State Department has announced.
Department spokesman Dean Fischer said the decision to
postpone the visit was taken “in the light of current developments
in the Middle East in particular and in the world in general.” He
said Fahd “determined that these developments require his
presence in Saudi Arabia."

3 potatoes, cubed
1 b-oz. can tomato paste
salt to taste (about 2 tsps.)
fresh parsley (optional;
added when reheated)
Place bones, short ribs, I tblsp,
salt and water in an 8-qt. pot.
Cover and bring to boil. Skim.
Add remaining ingredients, bring
to boil and reduce to simmer.
Cook covered for 3 and 'h hours,
making sure meat is tender.
Refrigerate overnight and remove
fat. Reheat with marrow bones
and some of the short ribs and
serve. Freeze the rest. Makes about
6 quarts of soup.
