Practicing for the Epstein School Founders’ Dinner entertain
ment are (I to r): Mark Mintz, Michael Gurwitz, Brian Coan and
Sara Shapiro. The theme of the play, which deals with the true
meaning of Bar Mitzva, ties in with this year’s theme, “Coming of
Age,” commemorating the school's 13th year. The dinner will be
held Wednesday, May 7, at seven o’clock at the Ahavath Achim

A viable peace proposal

Carrot Kugel
A carrot kugel using potato
starch is an excellent side dish with
stuffed veal breast or roast chick
en. It is good year-round, espe
cially if you overbought potato
starch.
4 eggs, separated
one-half cup of sugar
11/4 cup raw grated carrots
1 green apple, grated
quarter-cup of sweet red wine
one-half tsp. of orange peel
2 tbsps. of orange juice
1/3 cup potato starch
Beat yolks with sugar until
golden and creamy. Add remain
ing ingredients except the egg
whites. Blend well. Beat the egg
whites until they are stiff. Fold the

The time has come to choose
between constant war or a move
toward peace between Israel and
the Arab nations. To date, only
one Arab nation has taken the
initiative to implement the peace
process in the Middle East—The
Arab Republic of Egypt. Regret
tably, Egypt has experienced os
tracism—if only diplomatically —
from other Arab nations by having
been excluded from membership
in the Arab League due to its peace
agreement with Israel.
Curiously, we frankly wonder
why Egypt is the only Arab coun
try bordering on Israel which has
officially renounced war with Is
rael in exchange for coexistence.
Jordan, on the other hand, has
repeatedly refused to enter into
formal peace negotiations with
Israel. Perhaps now is the time,
when Egypt and Jordan maintain
close and friendly political ties, for
Jordan to establish diplomatic rela
tions with Israel.
We strongly believe that Jordan
and Israel would have everything
to gain and nothing to lose by face-
to-face peace talks. Jordan would
benefit from Israel’s advanced
economic, military and agricultu
ral capabilities. Israel could benefit
from a strategic ally and the inhab
itants of the West Bank would feel
secure. Open borders between
Jordan and Israel would tear down
the barriers of hatred and distrust
between two intelligent and histor
ically related nations.
If Jordan and Egypt establish
lull recognition of Israel and its
right to exist in the region, we are
confident that other Arab nations
would follow such as Saudi Ara
bia, North Yemen, Morocco, Tu
nisia, the Sultanate of Oman, Bah
rain and the State of Qatar. These
countries can defy all sanctions
w hich the Arab League would dare
to impose on them for diplomatic
relations with Israel. Once this
arrangement could be put into
operation, the Palestinians would
have to negotiate with not only
Israel but with all the other Arab
countries. The terroristic activities
associated with the PLO would be
greatly diminished and eventually
disappear.
No doubt, reasonable Arabs
would much prefer a Middle East
region which is peaceful and which
is open to provide for the welfare
of all its inhabitants. Likewise,
Israel’s leaders must deal maturely
with the long-standing issue of
antagonisms. Only in this setting
can lasting peace be achieved.

Pour into a well-greased 1-and-l / 2
quart casserole dish. Bake at 350°
for 45 minutes or until done. Serve
hot or cold. Serves six.
Spanish Rice
1 green pepper, diced
1 medium onion, diced
11/2 lbs. ground beef
1 bay leaf, crushed
oil
1 /4 stick margarine, cut up into
small pieces
2 16-oz. cans stewed tomatoes
2 cups cooked rice, seasoned
with salt and pepper
1 cup canned or frozen peas
Brown beef, green pepper, bay
leaf and onion in oil. In a greased
casserole put in 1 / 2 of the rice, 1 / 8
stock of margarine, the meat, peas,
and one can stewed tomatoes; then
the other half of the rice, the rest of
the margarine and the second can
of stewed tomatoes. Bake uncov
ered at 350 degrees for 30-40 min
utes. Serves six.
