Traditional Manuka foods are
prepared in oil in remembrance
of the miracle of the oil in the
Temple in Jerusalem liberated by
the Maccabees. While apparently
only sufficient for one day, the
oil burned for eight days.
There is somewhat of a “cultu
ral gap” between Israel and the
Diaspora on the matter of what
is the traditional Manuka treat.
Israelis opt for “sufganiot” w hile
Jews in the Western world have
always regarded potato pancakes,
popularly known as “latkes,” as
the quintessential Hanuka food.
Here are recipes for both:
Israeli Sufganiot
1 egg
3 tbsps. sugar
1 cup self-rising flour
5 tbsps. sour cream
I tsp. vanilla
1/2 tsp. grated lemon rind
oil for deep frying (4-8 cups)
confectioners sugar
Beat egg and sugar. Add re
maining ingredients. Mix until
smooth. Heat oil in a deep fryer
or deep pot until very hot. Drop
tablespoons of dough in pot and
cook on medium heat until
brown —about four at a time.
Sprinkle w ith confectioners sugar.
Makes 10-12 doughnuts.
Traditional Latkes
2-1/2 lbs. potatoes (white)
2 medium onions
3 large eggs
I tsp. salt
1/4 tsp. black pepper
4 tbsps. flour
1/8 tsp. baking soda
Shred potatoes and onions in a
food processor together to pre
vent potatoes from turning black.
Remove and blend remaining in
gredients in the processor. Mix
with potato-onion mixture.
l.et stand a few minutes to
thicken. Add a little more Hour if
mixture seems too liquidy. In a
large frying pan, heat about 1 8-
inch thickness of oil until hot.
Drop mixture with a wooden
spoon into pan and flatten with
back of spoon.
Fry until brown on both sides.
Drain on paper toweling. Serve
with sour cream, apple sauce or
cinnamon and sugar. Makes
about 30 pancakes.

nesday evening when U.S. Rep.
Andrew Young announced before
the group that he has accepted
the nomination as the next U.S.
Ambassador to the United Na
tions. This was the first confir
mation of his long-rumored ap
pointment.

Mrs. Sylvia (Saul) Becker has
been appointed to the national
women’s mission task force of
the Southeastern region of UJA.
The announcement was made by
Mrs. Harriet (Jerome) Zimmer
man, chairman. Mrs. Becker will
be developing interest of women
in Georgia, Alabama and South
Carolina to participate in the
March 13 Women's Mission to
Israel.

When the Atlanta Press Club
honored The Southern Israelite's
editor with “Adolph Rosenberg
Night” on Dec. 8, Atlanta Con
stitution cartoonist Cliff “Baldy”
Baldowski traced the honoree’s
career with a pictorial chronicle.
Above is Rosenberg as he embarks
on his life’s work in Jewish
journalism.

The theme “Carousel of Time”
will show the circular patterns of

mandments” are planned.

toot entertained Israel’s minister
of justice, Haim Zadok, at a
recent dinner in their home. Fol
lowing dinner Mr. and Mrs. Her
bert Elsas hosted a reception for
Minister Zadok and a group of
Atlanta attorneys. Elsas and
Taratoot are co-chairmen of the
1977 Atlanta Jewish Welfare
Federation Campaign.

Meir, Foreign Minister o! Israel,
declared that “Israel does not
fear a population explosion. We
regard a substantial increase in
population not as a menace but
as a challenge and as a great and
historic opportunity.” She said
Israel hopes to increase her pop
ulation by one million by 1970
and by another million in the
next decade.
