I atkes can he delicate, should he light and need not he greasy. After years ol experimenting. Helen Nash, lecturer, gourmet cook and author ol "kosher C ui- sine," oilers her recipes for potato pancakes as well as potato-zuc chini pancakes. I hey are delight ful variations on the latkes mother used to make. I hey can he served a'- part ol a winter meal, with meat or iish. or as a main luncheon course. 1 hey are traditional at Hanuka. which starts on Dec. 2h this year. Hanuka is the Jewish f estival of Lights. It commemorates the miracle ol the oil that burned in the temple lor eight days when there was only enough to last for one day. It is. therelore. tradi tional to serve dishes cooked in oil m celebration ol the holiday. Fortunately, one does not have to be Jewish to enjoy these tasty potato pancakes. Potato-Zucchini Pancakes 2 medium zucchini 2 large baking potatoes, about IV2 pounds 2 eggs, lightly beaten 1 small onion, grated fine l 1 /: tbsps. unbleached flour >/ 4 tsp. baking powder About 1 tsp. kosher salt \N bite pepper, freshly ground Vegetable oil 1 suggest you use a food pro cessor and a large non-stick skillet Wash zucchini, pat dry with paper towels, trim stem ends and grate fine in a food processor 1 it - ted with the grating attachment. Empty zucchini into a sieve, salt lighllv and leave to drain for 15 minutes. Wring out. in batches, in a sturdy dish towel until dry Place in a medium-size bowl. Peel potatoes and grate line in a food processor. Empty potato pulp into a sieve and wash well under cold running water till water runs clear. Wring out. in batches, in a dish towel. Add to zucchini and combine with eggs, onion, flour and baking powder. Season with salt and pepper. Preheat oven to 300° E. Pour oil into skillet to a depth of about ‘/ 4 inch and heat. When oil is hot. drop in level tablespoons of bat ter. flattening each mound slight ly. Fry on both sides until golden. Drain on paper towels, changing them as frequently as needed. keep pancakes warm on a rack set over a cookie sheet in the pre heated oven until all are readv. Happy Hanuka KAMIN &A5SOCIATES,INC. Note: Excess liquid will accu mulate in the potato-zucchini mixture by the time you reach the bottom of the bow l. Pour off this excess when filling each spoon. Latkes (Potato Pancakes) 3 large baking potatoes 2 eggs, separated I small onion, grated fine I tbsp. unbleached flour '/a tsp. baking powder About I tsp. kosher salt Black pepper, freshly ground Vegetable oil I suggest you use a food pro cessor and a large non-stick skillet. Peel potatoes and grate fine in a food processor fitted with the grating attachment. Empty potato pulp into mesh sieve and wash under cold running water until water runs clear. Drain well by shaking sieve. Empty potatoes into a bowl and combine with egg yolk, grated onion, flour and baking powder. Beat egg whites until stiff and fold into potato mixture. Season well. Preheat oven to 300°F. In a large skillet, heat some of the oil. reaching to about % inch in the pan. until very hot. Drop full tablespoons ol potato mixture into oil, flatten each mound slightly, and fry on both sides over medium-high heat until golden brown. Drain on paper towels, changing them frequently as they absorb the oil. Add more oil, making sure that this oil is hot enough before you drop in more potato mixture. To keep pancakes warm while frying the rest, place in oven on a rack set over a cookie sheet. Serve pancakes on a cloth nap kin. Makes about IS 2!/;-to 3- inch pancakes.
