It is also slated that the proper ties of rock salt maybe destroyed by loo much heal in drying, and it is recommend ed that it may be dried in a clean place in thc shade. The committee discourage the use of Liverpool bag salt, altogether, ns it is thought to contain certain impurities which render it unfit for keeping butter. JJairy-house.—'The committee advise a well-ventilated cellar with a spring of cold ■water running through it, as the best place for keeping milk. They recommend that thc pans be set in troughs and cold water conducted around them till thc anitml heal of thc milk has passed off—thc water not to stand round the pans, but be constantly moving, and pass through a drain. After the milk is cooled, it is recommended to place the pans containing it into water, rai sed to the temperature of 170 degrees—but it should never boil or simmer. Thc pans of milk arc then set back on thc troughs— (not in the water,) and stand for twenty-four hours, when the cream is taken off and churned. This process they say hastens the rising of the cream, so tnat it can be taken off in about half the time required in thc ordinary way, improves the quality by preventing sourness, and grcatlv facilitates the operation of churning. The timo oc cupied in heating the milk of a dairy of twenty cows, is from twenty-five to thirty minutes Thc pans arc made of tin, and handled when cither cold or hot by tongs made for tho purpose, which prevents any spilling or slopping of thc milk. Thc cltur- . ning is done every day except Sundays. “ In this way,” say the Committee, “ good butter may be made at all seasons of the year. We prefer dog days, and the latter part of the season, before thc frosts arc so severe as to injure the quality of the grasses, on account of the many noxious weeds which find their way into the stom achs of some cows, while in their tender state in early parts of the season.” The committee likewise remark, that thc differ ence in the quality of the dairy products in different districts, is owing in part to the difference in the quality of the grasses on which the cows arc fed. This principle they say is well settled in regard to tallow. Working butler.—The committee say— butler should bo so made ns to require but once working after the salt has been well incorporated—reflected workings ex pel more or less of thc substances which constitute its good flavor, and should not be worked or washed off. Hind oj churn.—The committee highly recommend a churn which one of them has seen at Washington, so constructed ns to carry many currents of air through the cream until the principle of separation is formed without any friction of oar or dash er. They say they arc inclined to think this churn miiv take the place of all oth ers in large dairies stable. Also, one small black horse, and one yoke of oxen; levied on as the property of George W. Baker mortgage Sale. ^flLL be sold before the Court House door at Anecdote.—We heard a story some time since, of Joe , which will hear repeatingof a country tavern in Canada, where had assembled several old countrymen discussing various matters connected with the ‘pomp and circumstance of war.’ In thc course of some remarks one of them stated that the English Government possessed thc largest cannon in thc world,and gave the dimensions of one which lie had seen. Joe’s yankec pride would not allow him to let such an asccrtion pass without contradic tion. ‘Poh! gentlemen,’ raid lie, ‘I won’t deny but that is a lair sized cannon; hut you ore a lectlc mistaken in supposing it to be the largest in the world. It’s not to be named in the same minute with one of onr yankec guns, which I raw in Charlestown last vear. Jnnitcr that was a cannon!
