Munchings
Here are some recipes that will be
perfect for anold-fashioned and mod
ern Back-Porch Brunch.
Basic Marinade
2/3 cup olive oil
1/4 cup white wine
1 tbsp. chopped fresh basil
1 tbsp. chopped fresh parsley
1 tbsp. chopped fresh thyme
1 tbsp. grated lemon zest
(optional)
Flavor with minced garlic
Salt to taste
(This marinade also works well with light
meats and seafood.)
Grilled Vegetable Kabobs
1 red bell pepper cut into 1 inch
squares
1 green or yellow pepper cut into
1 inch squares
1 zucchini, scored, cut into 1/2
inch slices
1 yellow squash, scored, cutinto
1/2 inch slices
24 red orwhite pearlonions, peeled
(Other vegetables may be substituted or
added. Remember that softer vegetables,
such as mushrooms and tomatoes cook
faster, and should be grilled on a separate
skewer.)
Skewerand alternate vegetables for color
on 6 skewers. Marinate kabobs for 1 hour.
Lightly brush hot grill with oil. Cook ka
bobs for 3 ro 5 minutes, basting with re
maining sauce. Serve with lemon garlic or
light caper mayonnaise and a glass of
chilled white wine.
Grilling Tips:
o Lightly score firm vegetables with a par
ing knife before marinating, to allow flavor
to soak in.
o Gas grills heat up fast but need soaked
wood chips for flavor--better still, use mes
quite wood chunks.
o Charcoal fires add special flavor and
burn hotter, but allow time for coals to
reach an ash glow for grilling.
Sardine and Potato Cakes
2 Ibsbaking potatoes, peeled and
cut into 1-inch pieces tsp. salt
1/2 salt
2 tbsp. unssalted butter

1 small yellow onion, finely
chopped
1 can oil- or water-packed
sardinwa, drained
1/3 cup Parmesan cheese, grated
2 tbsp. milk
3 tbsp. Iltalian parsley, chopped
1 tbsp. fresh thyme, chopped, or
1/2 1 tsp. dried rhyme
1/2 tsp. black pepper, freshly
ground
1/3 cup all-purpose fiour
1/2 cup plain dried bread crumbs
1 large egg
2 tbsp. olive oil
Combine potatoes, salt to taste, and
enough cold water to cover potatoes in a
large saucepan over high heat. Bringto a
boil and simmer until potatoes are very
tender, about ten minutes. Drain well and
return to pan, mash until smooth.
Meanwhile, in large skillet, melt one table
spoon of butter over medium heat, Add
onion and cook, stirring occasionally until
onion is very soft, about 6 to 7 minutes. Stir
onion into cooked and mashed potatoes
and add sardines,, cheese, milk, parsley,
thyme, salt, and pepper. Mix well and form
into 12 cakes, eachabout2-1/2"in diameer
(can be completed as much as one day
ahead and refrigerated).
Place flour on one plate and bread
crumbs on another, Break egg into pie
plate, add one tablespoon water, and beat

briefly with fork. Dredge one cake in flour,
theninegg andthen coatin bread crumbs.
Repeat with remaining cakes.
Heat two tablespoons of oil over me
dium high hear in same large skillet. Add
remaining tablespoons of butter and the
cakes. Cook cakes until browned on both
sides, about 3 minutes. Keep browned
cakes in a warm oven until ready to serve.
Serves 6.
