Glazed Sweet Potato
Mini Cakes
CAKE
1 pkg. Yellow Cake Mix
1 tbls. finely grated orange peel
2 tsps. cinnamon
1 cup unsweetened applesauce
1/3 cup oil
1/4 cup water
1/2 tsp. maple flavoring
4 eggs
2 cups grated peeled sweet
potatoes
1 cup chopped pecans
GLAZE
2 tbls. butter or margarine
1/4 cup firmly packed brown
sugar
1/4 cup dairy sour cream
3/4 tsp. maple flavoring
GARNISH
1/3 cup chopped pecans
3 tsps. grated orange peel
1 orange, sliced
Heat oven to 350°F. Grease and flour
12 mini-muffin cups (six 1-cup fluted
molds to a pan). In a large bowl, combine
cake mix, 1 tablespoon orange peel,
cinnamon, applesauce, oil, water, 1/2
teaspoon maple flavoring and eggs. Beat
at low speed until moistened; beat 2
minutes at high speed. Stir in sweet pota
toes and 1 cup pecans. Fill greased muf
fin cups 3/4 full. (If using only one pan,
refrigerate remaining batter until ready to
use.)
Bake at 350°F. for 20 to 30 minutes or
until toothpick inserted in center comes
out clean. Cool on wire rack 5 minutes;
remove from pans. Melt butter in small
saucepan over medium-low heat; stir in
brown sugar. Add sour cream, stirring
constantly until mixture is hot and brown
sugar is dissolved. DO NOT BOIL. Stirin
1/8 teaspoon maple flavoring and enough
powdered sugar for desired drizzling
consistency; beat until smooth. Drizzle
over warm cakes; sprinkle with desired
amount of pecans and orange peel. Gar
nish serving plate with orange slices.
(Makes 12 mini-cakes.)

Glazed Sweet Potato Mini Cakes
PINA COLADA
CHEESECAKE
1-1/2 cups vanilla wafer crumbs
1 cup flaked coconut, toasted
1/3 cup margarine melted
1 can (6 oz.) pineapple juice
1 envelope unflavored gelatin
3 pkgs. (8 oz.) cream cheese,
softened
3/4 cup plus 2 tbls. sugar, divided
1/4 cup dark Jamaican rum
3/4 tsp. coconut or vanilla extract
2 cups frozen non-dairy
whipped topping, thawed
1 can (20 oz.) crushed pine
apple
1 tbls. cornstarch
Combine crumbs, coconut and marga
rine in medium bowl. Press mixture on
bottom and sides of 8- or 9-inch
springform pan. Chill.
Pour juice into small saucepan. Sprinkle
gelatin over juice; let stand 5 minutes to
soften gelatin. Cook and stir until gelatin
dissolves; remove from heat. Set aside.
Beat cream cheese and 3/4 cup sugar in
large bowl until smooth. Beat in gelatin
mixture until well blended. Beat inrum and
coconut extract until blended. Gently fold

in whipped topping. Spoon into prepared
crust. Chill 6 hours or until set.
Combine undrained pineapple, corn
starch and remaining 2 tablespoons
sugar in small saucepan. Cook and stir
until mixture boils and slightly thickens.
Chill. Spoon over top of cheesecake.
Garnish with additional toasted coconut.
PINEAPPLE GINGER
CHEESECAKE
1-1/4 cups seedless spreadable fruit,
divided
4 tbls. cornstarch, divided
2 cans (8 oz.) crushed pineapple,
drained
2 cups ginger cookie crumbs
(about 35 cookies)
cup margarine, melted
1/4 no stick cooking spray
pkgs. (8 oz.) cream cheese,
5 softened
cup sugar
1 eggs
2 tbls. lemon juice
2 tsps. grated lemon rind
2 cup dairy sour cream
1/2 raspberries to garnish
Preheat oven to 350°F. In a medium
saucepan combine 3/4 cup spreadable

fruit and 2 tablespoons cornstarch. Cook
and stir over medium heat until thick and
bubbly. Stir in pineapple; set aside. In a
small bowl combine cookie crumbs and
margarine. Spray a 9 1/2-inch springform
pan with cooking spray. Press crumb
mixture into bottom of pan. Gently spread
pineapple mixture over crumbs.
In a large bowl beat cream cheese, su
garandremaining cornstarch withan elec
tric mixer on medium speed. Add eggs,
lemon juice, lemon rind and sour cream,
beat until blended. Pour into pan and
spread to smooth. Bake 1 hour 10 minutes
or until a toothpick inserted into center
comes out clean. Cake will still be jiggly.
Cool on wire rack. Refrigerate overnight.
Top cake with raspberries. Brush with re
maining spreadable fruit, melted. (Makes
12 servings).
