It may be of some help to mo
thers to Jot down a few recipes here
for preparing vegetables for little
chlldreif, or to go bacs still further
tell them what vegetables to use.
Boil In Soup Stock.
> Spinach, lettuce, beet greens, car
rots, chard, turnips, onions, string
t
beans, celery, pews, and aspuragus
are good.
Wash these vegetables and
them for making soup.
Cut them into small pieces, then
boil slowly until they are tender in
I a little soup stock (water in which
beef or lamb has been boiled). They
i
may also be boiled in plain water—
! as little water as possible.
For babies old enough to take
! vegetable soup in addition to their
■ milk diet the vegetables may be
strained and only the Juice used.
In straining, the vegetables may be
gently squeezed with the back of a
large spoon. This will make the
soup cloudy but it is the best way
to get the nutritious elements con
tained in the vegetables.
Puree for Older Babies,
For older babies who can take
the vegetable pulp, the vegetables
should be forced through a very fine
sieve. This is known as puree. When
children are still older they can
take the vegetables finely chopped,
or mashed with butter or white
sauce mixed In. This is right for
children in their second year. All
vegetables should be salted a little
but no other seasoning must be
used.
Enough vegetable soup may be
prepared for three or four days, ex
cept when the weather Is very hot.
It should be kept in a cool place,
and each day before being used
should be heated again to the boil
ing point.
Potatoes are best baked for the
younger children. For older chil
dren they may be mashed or boll-

Here is the new all-metal leviathan o i the air, the “City of Glen
dale,” which soon will take the air at Glendale, Calif. Captain T.
B. Slade, its designer and builder, planned it as the first of a fleet
of transcontinental air liners. It is claimed the dirigible will need
no mooring masts or landing fields as it can be brought to a stop
in mid-air and passengers and freight lowered in cable elevators.

and Bill Searcy returned to Griffin
Sunday after an extended trip
thru Florida and Cuba.
Radcliffe Ash, of Atlanta, spent

turned home after visiting Miss

Mr. and Mrs. Hugh Carmichael,

Mrs. G. W. Loehr spent the week
end with her mother, Mrs. Beulah

ter, Mr. and Mrs. Ross Weaver, in

To Cook Rice.
Rice is good for children. It al
ways should be thoroughly washed
and cooked in plenty of water with
out a cover; 4 cups water. 1 cup>
rice, 1-2 teaspoon salt. Let water
boll and add rice slowly while wa
ter is boiling. .Boil 45 minutes and
strain. The water may be used as
a foundation for soup.
Someone may ask about tomatoes.
It appears that home-cooked to
matoes lose something in the cook
ing that they should have Strange
ly enough, the process used by can
neries preserves this. The vitamins
at least are retained.
Corn is used mostly in the diet
of older children, as are the pod
beans. They are better in purees.
