cheese/tomato filling. To this

pepperoni, peppers, onion,
mushrooms. However, indi
vidual pizzas made at home
are perfect for an onion fill
ing to serve as snack or en

blueberry filling for dessert.

The recipe for the Quick
Pizza Duo yeast-raised crust
may be mixed in a blender
or with rotary beater. It
makes eight individual
pizzas and the filling is up
to you for easy holiday
menus.
QUICK PIZZA DUO
3 to 4 cups unsifted flour
2 teaspoons sugar
2Vs teaspoons salt
1 package active dry yeast
*4 cup (Ms stick)
margarine, sofiened
1 cup very hot tap water
1 egg (at room
temperature)
1 cup (4 ounces) shredded
Mozzarella cheese
2 tablespoons grated
Parmesan cheese
Peanut oil
Vanilla ice cream
Measure 2 cups flour into
large mixing bowl. Set aside.
In blender container thor
oughly mix 1 cup flour,
sugar, salt and undissolved
active dry yeast. Add soft
ened margarine.
Pour very hot tap water
over dry ingredients in
blender. Immediately cover
blender; whirl on high speed
for 30 seconds. Stop; scrape
inside of container with rub
ber spatula; whirl 15 seconds
longer. Stop. Add egg. Cover
blender; whirl on high speed
for 30 seconds. Pour mix
ture over flour in mixing
bowl and mix thoroughly. If
necessary, add additional
flour to make a soft dough.
Cover; let rise in warm
place, free from draft, until
doubled in bulk, a b o u t 1
hour.
Meanwhile, prepare fill
ings. When dough is ready,
turn out onto lightly floured
board. Divide dough into 3
equal pieces. With floured
hands, press pieces of dough
onto greased baking sheets
and into circles, about 4'2
inches in diameter. Form a
standing rim around edge of
each circle. Bake in a 350-
degree oven for 15 minutes.
Remove from oven; spread
Onion Filling over four of the
crusts. Sprinkle with chees
es and drizzle with peanut
oil. Spoon Blueberry Filling
into remaining four crusts.
Return to 0 ven; bake 15
minutes longer, or until
cheese is m e 11‘ e d but not
browned. Serve .onion-filled
pizzas immediately; serve
blueberry pizzas warm or
cold topped with vanilla ice
cream. Makes \ individual
pizzas.

ONION FILLING
Melt 1 tablespoon marga
rine in a skillet. Add 1 cup
sliced onion, 1 large clove
garlic, crushed, V 2 -teaspoon

salt, % -teaspoon crushed
oregano leaves and Vs-tea
spoon crushed basil leaves.
Saute, stirring until onions
are tender.

BLUEBERRY FILLING
Combine 1 can (1 lb. 5 oz.)
blueberry pie filling and %-
teaspoon g r o u n.d nutmeg.
Stir until thoroughly blended.
