Casserole
brings out
best in veal

Veal is a very tender cut
of beef but must be handled
differently than beef. Be
cause veal, or young calf,
has little fat it needs slow,
moist cooking. For a true
change in a casserole, com
bine veal and quick-brown
sausages in a special baked
dish.
VEAL AND SAUSAGE
BAKE
1 veal cutlet (about 1
pound)
Vt pound quick-brown
sausages, halved
Seasoned flour
3 tablespoons salad oil
1 large onion, sliced thin
1 medium eggplant, peeled
and cubed
1 tablespoon liquid gravy
seasoning and
browning sauce
1 can (1 pound) stewed
tomatoes
1 can (3 ounces)
mushroom stems and
pieces with liquid
% cup soft white bread
crumbs
*4 cup grated Parmesan
cheese
2 tablespoons margarine
or butter
Have the veal cutlet
pounded very thin, then cut
in 4 pieces. Roll the veal and
sausage pieces in seasoned
flour. Heat the oil in a heavy
skillet or casserole. Brown
the veal, sausage and onion.
Remove the meats and
onion from pan, letting oil
drain back into pan. If nec
essary, add another table
spoon oil. Stir in eggplant
and cook for 5 minutes. Add
gravy seasoning, tomatoes,
mushroom stems and pieces
with liquid and 1 cup hot
water or broth. Mix well.
Spread the meats and onion
in a layer on top of eggplant,
top with mixed crumbs and
cheese. Dot with margarine
or butter. Bake in a 350-
degree oven for about 30
minutes or until top is crisp
and golden. Makes 4 serv
ings.

Does his duty
PASADENA, Calif. (UPI) -
Walter Pudinski found a man
searching an auto in an
apartment house garage Sun
day. “What are you doing?”
Pudinski said. “I’m a police
officer.”
“That’s too damn bad,"
replied the intruder, shoving a
.38-caliber revolver into the
unarmed Pudinski’s stomach.
Pudinski grabbed the barrel of
the pistol, disarmed the man,
wrestled him to the floor and
arrested him.
Ronald F. Hayward, 29, of
Gibbonsville, Idaho, was booked
on suspicion of burglary,
assault with a deadly weapon
on a police officer and
possession of narcotics for sale.
Pudinski, 45, is a police
officer, but arresting armed
burglars is not part of his usual
routine. He is commissioner of
the California Highway Patrol.
