Stuffed fillet rates raves

A stuffed fillet of beef
makes an enviable entree,
one that should bring only
raves. Fill the fillet with
sauteed onion, carrot and
celery and top with diced
Austrian Swiss cheese. When
almost roasted, cover top of
fillet with additional cheese
slices and return to oven un
til cheese is melted. Serve on
a platter surrounded with
baby whole carrots and as
paragus spears.
BEEF TYROLEAN
1 beef fillet
Salt, pepper and mashed
garlic (to taste)

Cranberries are now a
year-round pleasure because
of new packaging tech
niques. However, the tart
and colorful red berry is still
the traditionally favorite
fruit to accompany Thanks
giving dishes. It appears as
a sauce, jelly and in a gela
tin mold. A cranberry gela
tin mold with a difference
combines mandarin oranges,
pineapple, bananas, coconut,
sour cream and whipped
cream. Such a combination
makes it an excellent salad
or a dessert.
CRANBROSIA
2 cups fresh or frozen
fresh cranberries,
coarsely ground or
chopped
1 cup sugar
1 can (11 oz.) mandarin
orange segments,
well drained
1 can (8 oz.) pineapple
chunks, well drained
1 cup shredded coconut
1 large banana, cubed
2 envelopes unflavored
gelatin
1 cup sour cream
1 cup heavy or whipping
cream
Combine cranberries and
sugar. Mix thoroughly to dis
solve sugar. Drain well and
reserve liquid from oranges
and pineapple chunks. Add
oranges, pineapple, coconut
and banana to cranberries.
Sprinkle gelatin over % cup
of combined juices to soften.
Place over medium heat,
stirring constantly to dis
solve gelatin. Add to fruits.
Fold in sour cream. Whip
cream until stiff peaks form.
Fold into fruit mixture. Turn
into 13x9x2-inch dish or 2-
quart mold. Chill thoroughly
until firm, overnight if pos
sible. If desired, servings
may be topped with more
sweet or sour cream. Serve
as salad or dessert topped
with whipped cream, if de
sired. Makes 16 servings.

Bank flown in
TOMS RIVER, N.J. (UPI) -
A spherical building originally
designed as a mountain lodge
was lowered into place by
helicopter to serve as a bank.
The structure was flown 60
miles from Perth Amboy
because highway officials said
it was too big to travel on
public roads by truck. Within 40
minutes after touchdown Satur
day, the building opened for
business as a branch office of
the City Federal Savings and
Loan Association of Elizabeth.

open out. Sprinkle meat on all
sides with salt and pepper
and rub with garlic. In a
small skillet, heat butter and
saute onion, carrot and cel
ery until soft and lightly
browned. Spoon mixture onto
cut surface of fillet. Finely
dice one package of Swiss
cheese and sprinkle over
vegetables. Fold over meat
and fasten opening with
toothpicks and string. Place
in a shallow roasting pan and
roast in a preheated 400-
degree oven for 40 minutes.
Remove from oven and re
move string and toothpicks.
Place remaining slices of
cheese over roast. Replace
in oven and roast for another
five minutes or until cheese
is melted. Serve garnished
with baby whole carrots and
asparagus spears. Cut into
thick slices to serve. Makes
6 to 8 servings.
