Here’s what to do
about turkey time

What is a turkey roast? Many
homemakers are looking for
convenience food for the
holidays. Try boneless turkey
roasts or turkey roll as they are
sometimes called. In fact the
two to five pounds was
developed to meet the needs of
today’s homemakers.
When shopping for turkey
roasts, be sure to look for the
U.S. Department of Agriculture
grade standard. To qualify for
this standard the turkey roast
must be prepared from young
turkey of USDA grade A
quality. It must be made in such
away that each slice will hold
together when it is sliced.
Turkey roasts or rolls may be
purchased raw, fully cooked or
snoked. They are made of all
white or all dark meat or a
combination of the two. The
boneless meat is formed in
cylindrical or rectangular
shapes. They are packaged in
foil, plastic, or aluminum pans.
These roasts are ideal for
roasting and rotisserie cooking.

until you are to place it in a

more quickly through it. You
use approximately % cup of
stuffing per pound of frozen
ready-to-cook turkey. The
center of the dressing must
reach a temperature of at least
165 degrees while in the oven.
When the meal is over,
promptly remove all stuffing
from the carcass. It can be
refrigerated and reheated for
another meal. The bird should
also be refrigerated. It is very
easy for bacteria to get on the
cooked products and cause food
poisoning.
Never stuff a raw bird at
home and freeze it. There is too
much danger of spoilage before
the stuffing is cooled to below 15
degrees.
What is the amount of turkey
that a homemaker should buy
for her family?
For the ready-to-stuff turkey,
you should buy 1% pounds per
person and for the already
stuffed, you should buy 1% to 2
pounds of turkey. But % pound
per person for the boneless
turkey roast.
How can one tell if the turkey
is done? One way is to protect
thumb and forefinger with
paper or cloth. Then you pinch
the thickest portion of the
drumstick and the meat should
feel very soft.
Another way is to insert roast
meat thermometer into thigh
muscle next to body cavity. The
temperature should be about
185 degrees F.
How do you store left-over
turkey? Immediately after
meal is finished, separate
turkey and dressing, if the bird
is stuffed. Then remove all
meat from bones. Freeze meat
and dressing separately unless
you plan to use it within three or
four days. Store what you plan
to use immediately in covered
containers in refrigerator.
Don’t discard the carcass, but
break it up and boil it in about
two quarts of water until all
meat leaves the bones. This will
produce a rich broth which can
be used in soups and casseroles.
If left-over turkey meat is
frozen in about two cup batches,
you will find that you can
quickly prepare such delicious
dishes as creamed turkey,
turkey pies, turkey spaghetti
amd salad within the next
month or so.
Oregon Elks
lose their
exemption
PORTLAND, Ore. (UPI) -
Oregon’s top elected officials
deferred a decision today on
whether to appeal a federal
court ruling lifting the Elks’ tax
exemption in the state because
of their “whites only” member
ship policy.
Gov. Tom McCall said he
would have to confer with
Attorney General Lee Johnson
about the state’s position—a
political dilemna which was
bound to anger either fraternal
organization members or racial
minorities.
“We cannot say at this time
whether the state will appeal,”
said Charles H. Mack, director
of the Oregon Department of
Revenue, the defendant in the
suit decided Monday by a three
judge panel.
The federal court ruled the
state could not grant tax
exemptions to the Elks because
the organization’s membership
rules violate the U.S. Constitu
tion.
“By accepting the state’s
generosity, the Elks Lodge is
obligated to comply with the
equal protection clause of the
14th Amendment,” the decision
said. “And the state is under
duty to ensure that the lodge
meets this obligation.”
Attorneys said appeals filed
with the U.S. Supreme Court by
a Portland Elks Lodge and a
group called Oregon Non-Profit
Organizations, Inc., put a cloud
over the ruling and they were
not sure when it would take
effect. The Elks and Oregon
Non-Profit appealed decisions
that they could not intervene in
the case because they tried to
intercede too late.
Mack said the ruling probably
will affect other groups besides
the Elks.

What would cause a stillbirth?

Dear Dr. Lamb—When a
25-year-old girl with a nor
mal healthy record became
pregnant her blood pressure
rose. Eventually she gave
C remature birth to a still
orn child which was pro
nounced dead eight hours
prior to delivery. Now, two
months later she is pro
nounced “healthy and nor
mal.” What factors might
have caused this irregular
prenatal condition as well as
the death of the child?
Dear Reader—Pregnancies
really aren’t such simple
matters and there are a
number of things that can go
wrong. The most likely cause -
of the type of problem you
describe is “toxemia of preg
nancy.” For some reason the
mother develops a toxic re
action to the changes of
pregnancy and all of

himself up when they learned
he was wanted for three Los
Angeles area bank robberies,
detectives said Monday. But

pectant mothers keep their
weight down and restrict
their salt intake. The gener
al belief is that if a woman
starts gaining weight rapid-,
ly in pregnancy and retain
ing fluid she is much more
likely to develop this type of
response.
Toxemia of pregnancy can
also be responsible for the
death of the baby. It seems
to be a metabolic response
of some type. It is not a con
tagious or infectious disease.
Dear Dr. Lamb—ls it true
that medical science has
shown that people should
have five to six hours be
tween meals? I have read
that anything remaining in
the stomach six hours after
t a test meal was thought to
i be abnormal. Is it also true
1 that eating between meals
s insults the human mecha
nism and has much to do
with the efficiency of the
mind and body?
Dear Reader—No, it is not
necessary to have a five to
six hour interval between
meals. In fact, in certain
medical conditions where
small meals are recommend
ed, patients are often ad
vised to have five or six
small meals a day. Eating
between meals isn’t any
problem unless one wants to
control his calorie intake.
Then the additional calories
associated with snacking can
become important.
What one eats has a great
deal to do with how fast the
stomach empties. Liquids go
straight through the stomach
usually, particularly if they
are at room temperature or
warm. Foods that are prin
cipally carbohydrates or
sugar will be processed more
rapidly and eliminated from
the stomach. Protein foods
are eliminated less rapidly
and fat foods may stay in the
stomach longer than six
hours undergoing their initial
digestion process.
Cold foods slow down the
movement of the stomach
and may cause food to stay

empty out the test meal well
