FRESH APPLE CHEESE
BAKE
6 medium apples, pared,
cored and sliced (6
cups)
1 /i cup packed brown sugar
Vi teaspoon salt
% teaspoon cinnamon
2 tablespoons fresh orange
juice
1 teaspoon grated fresh
orange rind
% cup chopped pecans
In large bowl, combine ap
ples with remaining ingredi
ents Turn into 2-quart baking
dish Top with Cheese Crum
ble .* Bake in 375-degree oven
45 minutes, until apples are
tender. Serve with meat or as
dessert Makes 6 servings
'Cheese Crumble
% cup all-purpose flour
'/. cup packed brown sugar
1 teaspoon grated fresh
orange rind
’/» cup (2 ounces) shredded
Cheddar cheese
’/« cup butter or margarine,
softened
In bowl, mix flour, brown
sugar, orange rind and cheese
Cut in butter until mixture
resembles coarse meal.

grape salad

summer dish, combine thinly
sliced cucumbers and green
grapes in a sweetly tart mari
nade. Salads always are wel
come on hot days and this
combination will please the
serious dieter who may use a
sugar substitute to eliminate
those sweet calories if de
sired.
DANISH SLICED CUCUM
BER WITH GREEN GRAPES
2 8-inch cucumbers, pared
and thinly sliced
1 teaspoon salt
6 tablespoons cider
vinegar
6 tablespoons water
6 tablespoons sugar
1 cup halved and seeded
green grapes (fresh or
canned)
Dried dill weed
Salt and black pepper
Sprinkle cucumber slices
with salt in small mixing
bowl. Allow to stand 15 min
utes. Stir together briefly and
allow to stand another 15
minutes. Turn cucumbers into
strainer to drain off liquid.
Combine vinegar, water and
sugar in same bowl. Stir until
sugar dissolves. Add cucum
bers and grapes in layers,
sprinkling each layer with a
dash of dill weed. Salt and
pepper to taste. Cover tightly
and chill well. If desired,
serve on lettuce cups. Top
with dollop of sour cream if
desired. Makes 5 to 6 serv
ings.

Urges pressure
COVINGTON, Ky. (UPI) —
The national commander of the
American Legion says the
United States should apply
military pressure to North
Vietnam if necessary to get
information on Americans still
missing in action.
“If necessary, military pres
sure should be brought to bear
to force the North Vietnamese
to let our investigation teams
go in there (North Vietnam),”
said Joe Matthews of Fort
Worth, Tex. “They need to go
back into the interior and check
around all back there.
“The families of the missing
in action should be given some
kind of satisfactory answer so
they feel everything humanly
possible is being done for their
men,” Matthews said.

Sauerkraut is the stuff of food legend

Another food legend weaves
around the origin of sauer
kraut. Actually the Austrians
named this white cabbage
dish that is fermented in salt,
not the Germans Supposedly
the Austrians got the recipe
from the Chinese byway of
the Tartars. They soured the
cabbage with winter rice wine
and ate it with their rice. Lat
er caraway and juniper ber
ries were used to flavor the
salted cabbage. Here is a ver
sion that combines apples and
sauerkraut to make a cold
salad that goes well with
those summer barbecued
meats.
SWEET N' SAUERKRAUT
2 cups drained sauerkraut
1 cup diced apple,
unpeeled
V» cup peanut oil
’/. cup chopped parsley
Vi teaspoon caraway seed
’A teaspoon salt
V. teaspoon pepper
Combine sauerkraut, apple,
peanut oil. chopped parsley,
caraway seed. salt, and pep
per. Chill until ready to serve
Makes 4 to 6 servings.
