Budget beef cuts
make the meal
The holidays bring both
joy and busy schedules pack
ed with a million things to
be done. They also make
heavy demands on the family
pocketbook. Time and money
are at a premium now.
This dual challenge can be
countered with careful plan
ning. Make weekday family
dinners the budget and time
stretching kind. This need
not mean skimping on flavor
or food value. At least, not
when beef recipes that cook
in minutes are at hand.
Beef blade steaks, marin
ated and refrigerated ahead,
broil quickly. Speedy ground
beef dishes are legion and
many beef liver preparations
are fast and easy. These ex
amples of delicious dinners
that can be created in a
hurry are suggested by Reba
Stao'gs. National Live Stock
& Meat Board.
Chuck Wagon Chuck Steaks
1 to 2 beef blade steaks,
cut 'fa to % inch thick
1 medium-sized onion,
chopped
1 cup catsup
'/a cup vinegar
2 tablespoons brown sugar
2 teaspoons salt
1 clove garlic, crushed
% teaspoon hot pepper sauce
Combine onion, catsup, vin
egar, brown sugar, salt, gar
lic and hot sauce in saucepan
and cook slowly 10 minutes,
stirring occasionally. Cool.
Pour sauce over steaks in
utility dish or plastic bag,
turning to coat all sides.
Marinate in refrigerator 4
hours or overnight. Pour off
and reserve marinade. Place
steaks on rack on broiler pan
3 inches from heat and broil
15 to 25 minutes, depending
upon thickness of steak and
degree of doneness desired.
Turn and brush steaks with
marinade occasionally.
Jiffy Chow Mein
P/2 pounds ground beef
1 medium onion, sliced
1 Vi cups chopped celery
1 cup water
1 can (16 ounces) chop
suey vegetables, drained
% cup soy sauce
V 2 teaspoon sugar
2 tablespoons water
2 tablespoons cornstarch
Brown ground beef in large
frying-pan. Pour off drip
pings. Add onion, celery and
1 cup water. Cover tightly
and simmer 15 minutes. Add
chop suey vegetables. Com
bine soy sauce, sugar, 2
tablespoons water and corn
starch and add to meat mix
ture. Continue cooking for 5
minutes or until sauce is
slightly thickened. Serve with
Chinese noodles. 6 servings.
Liver and Onion Fromage
1 pound beef liver, sliced
Vi inch thick
3 tablespoons flour
Vi teaspoon salt
i/ 8 teaspoon garlic salt

grated cheese and onion over
liver, turning off heat and
cover. When cheese is slight
ly melted, remove liver to
hot platter and serve immedi
ately. 4 servings.
Papaya tuna salad, tropical touch

Speedy transportation of
food has made a difference in
American eating habits. This
is especially true of certain
fruits and vegetables which
thrive in a more tropical cli
mate Hawaiian papayas are a
classic example of a nutri
tious fruit that is being
shipped to many parts of the
continental United States.
Although it is relatively ex
pensive. a papaya goes a long
way and can become an inte
gral part of the diet of older
persons who need all the di
gestible vitamins and miner
als they can get in an easy-to
prepare and flavorful manner.
PAPAYA TUNA
SALAD
1 can (3V< ounces) tuna,
drained and flaked*
Vz cup mayonnaise
1 teaspoon chopped green
onion
Vz stalk celery, chopped
finely
Vz teaspoon lemon juice
Salt and pepper
'h pint small curd cottage
cheese
1 Hawaiian papaya
Paprika
Blend tuna, mayonnaise,
onion, celery and lemon juice.
Season to taste with salt and
pepper Chill To serve: Cut
papaya in half Discard seeds.
Fill cavities with cottage
cheese, rounding top. Spoon
tuna dressing over cottage
cheese. Garnish with paprika.
Makes 2 servings.- -
Or use one-half cup left
over diced chicken or shrimp.
— For single serving use
one-half cup small curd cot
tage cheese and save one-half
of tuna dressing to serve over
crisp greens for another meal.
Seal leftover papaya in plastic
wrap, refrigerate and use
within three to five days.

Strange driver
ONEONTA, N.Y. (UPI) —
There was somethiig familiar
about the car cruising a city
street and police officer Allen
Case ordered it pulled over so
he could investigate.
But leaning into the auto, he
realized the driver was not
familiar, so he arrested him.
It was Case’s missing car and
Gary Kateor, 26, of Franklin,
N.Y., was charged with unau
thorized use of a motor vehicle.
