homeland. She shares some
of her favorite recipes
(adapted for American
tastes) for those who are at
wits’ end for something dif
ferent to serve during the
many days and nights of holi
day entertaining.
CACIK
Chilled Yogurt
Soup or
Relish
1 cucumber, oared and
coarsely grated
1/2 teaspoon salt
1 small clove garlic,
crushed
2 teaspoons vinegar
2 containers (8 ounces
each) plain yogurt
2 tablespoons chopped
fresh mint, or 1 tables
poon dried mint
2 tablespoons olive oil
1 cup crushed ice
Grate cucumber into small
bowl and sprinkle with salt.
Let stand for 10 minutes;
drain. In medium bowl, mix
cucumber, garlic, vinegar,
yogurt, mint and oil. Chill.
Add crushed ice just before
serving. Makes 4 to 6 serv
ings.
TUNA APPETIZER
BALLS
2 cans (BVi or 7 ounces
each) tuna in vegetable
oil
4slices white bread,
finely crumbled
2 eggs
2tablespoons sliced
scallions
3 tablespoons chopped
pignolia nuts
2 tablespoons currants
2 tablespoons chopped
fresh dill, or 1 tables
poon dried dill weed
1/2 teaspoon salt
1 /2 teaspoon allspice
1/4 cup flour
1 cup salad oil
Drain tuna and flake finely
in medium bowl. Add bread
crumbs, eggs, scallions, nuts,
currants, dill, salt and
allspice. Mix well. Form into
small balls, about 1 tables
poon each. Chill for 30
minutes. Coat balls with
flour. Heat oil in large skillet.
Add balls and fry until
golden brown. Drain well and
keep warm in chafing dish
over canned heat. Makes 18
appetizer servings.
Portakal Peltesi
Orange and Grapefruit
Pudding
1-1/2 cups sugar
1/2 cup cornstarch
2 cups orange juice
2 cups grapefruit juice
1 cup water
4 oranges, sectioned*
2 grapefruit, sectioned*
1 cup slivered almonds
In medium saucepan mix
sugar and cornstarch. Stir in
orange and grapefruit juices
and water. Cook, stirring con
stantly, over medium heat
until mixture thickens and
comes to a boil. Simmer 1
minute; remove from heat.
Add orange and grapefruit
sections and almonds. Pour
, into individual glasses or into
a large bowl. Chill until set.
Makes 8 servings.
‘To section oranges and
grapefruit, cut slice from top,
' then cut off peel in strips
from top to bottom, cutting
deep enough to remove white
membrane, then cut slice
from bottom. Or cut off peel
round and round spiral
fashion. Go over fruit again,
removing any remaining
, white membrane. Cut along
side of each dividing
membrane from outside to
middle of core. Remove sec
tion by section over bowl to
' retain juice from fruit.
TARATOR
(Nut Sauce)
2 cups shelled walnuts or
hazelnuts
1 cup soft fresh white or
rye bread crumbs
(crusts removed)
1 tablespoon finely
minced garlic
1/2 teaspoon salt
1/4 teaspoon cayenne pep
per
1/4 teaspoon paprika
1/4 to 'h teaspoon Tabasco
pepper sauce
1/4 cup olive oil
1/3 cup red wine vinegar
3tablespoons mayon
naise
1/2 cup water
Grind nuts in electric
' blender. In medium bowl mix
nuts, bread crumbs, garlic,
salt, cayenne, paprika and
pepper sauce. Add oil and
vinegar and mix until liquid
is absorbed. Stir in mayon
naise and water. Beat until
smooth. Chill. Sprinkle with
paprika. Serve as dip with
' raw cauliflowerets. Makes 2
cups.
