great Easter Egg dishes.
EASTER POTATO SALAD
1 tablespoon prepared mustard
1/2 cup French dressing
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/8 teaspoon pepper
4 slices bacon
1/2 cup chopped onion
1/3 cup chopped green pepper
3 cups cooked diced potatoes
1/4 cup chopped pimiento
4 hard cooked eggs, chopped
Combine dressing, mustard, Worcestershire sauce, salt, and
pepper in mixing bowl. Fry bacon in skillet, until crisp. Remove
bacon and crumble. Saute onion and green pepper in bacon
drippings until tender. Add potatoes, pimiento, bacon, and
dressing mixture. Heat; garnish with hard-cooked eggs.
SMOKED EGG DIP
12 hard cooked eggs
2 1/2 teaspoons liquid smoke seasoning
3/4 cup mayonnaise or salad dressing
1 tablespoon wine vinegar
2 teaspoons Worcestershire sauce
3 teaspoons brown mustard
8 drops hot sauce
1 teaspoon salt
1/2 teaspoon onion salt
Combine all ingredients in blender or mixer and beat until
smooth. Have consistency soft enough to be dipped easily. Pile
into chilled bowl, serve with carrot strips, celery sticks, raw
cauliflower, potato and com chips.

Broccoli,
a devine
budget dish

Broccoli Egg Divan sounds
as though it would take hours
in the kitchen to create and
break anyone’s food budget.
However, this is an easy dish
to prepare that is definitely
rich in flavor appeal. As
fresh vegetables come into
season and are less expensive
try substituting carrots, cel
ery, spinach, asoaraeus or
green onions for the broccoli
using the basic Egg Divan
sauce.
BROCCOLI EGG DIVAN
1 bunch fresh broccoli
4 hard-cooked eggs
1/2 teaspoon salt, divided
1/4 teaspoon pepper
1 can (10-1/2 ounces)
condensed Cheddar
cheese soup
1/3 cup milk
1/4 cup fine dry bread
crumbs
2 tablespoons melted
butter or margarine
To prepare broccoli, cut off
large leaves and the bottom
of the stalk. Wash well. If
stalk is more than 1/2 inch in
diameter, make 2 lengthwise
slits almost to flowerets. Cook
broccoli, uncovered, in boil
ing salted water to cover un
til tender, about 15 minutes.
Drain. Arrange broccoli,
stems toward the center, in a
10-inch pie plate. Slice egg
crosswise and layer over
broccoli. Sprinkle with 1/4
teaspoon salt and pepper.
Mix undiluted soup with milk
until smooth. Pour over broc
coli and eggs in pie plate. Mix
together bread crumbs,
melted butter and remaining
1/4 teaspoon salt. Sprinkle
over cheese sauce. Bake in
375-degree oven 20 minutes,
until cheese sauce is bubbly
and bread crumbs lightly
browned. Makes 4 servings.
Cruzeiro
devalued
BRASILIA (UPI) - Brazil
has devalued the cruzeiro for
the third time this year.
The Central Bank of Brasil
said in an official communique
said that beginning Tuesday the
parity rate for the cruzeiro
which is pegged to the U.S.
dollar would be 6.515 for
purchase, and 6.555 for buying.
The move represented a 1.559
per cent devaluation in comma
prison to the last time the
cruzeiro was devalued, 54 days
ago.
Since the beginning of 1974
the cruzeiro has been devalued
by a total of 5.42 per cent.
