Good dressing can lift salad

, A good dressing can lift a
salad to unexpected heights.
A poor dressing, in turn, can
depress an otherwise good
, salad into a tasteless mass.
A well-seasoned dressing
should compliment the in
gredients selected for the
salad — should enhance, but
never overpower them.
When using herbs and
spices, add them with a
judicious hand. Remember,
too little can be remedied, but
too much cannot.
Dressing recipes number

SALMON PEPPER
, BOAT SALADS
11 (7% oz.) can salmon
2 hard-cooked eggs, diced
One-third cup chopped

COOL COMBINATION: A salad made of fresh fruit in season, such as fresh grapefruit
sections, fresh orange slices, strawberries, avocado and pineapple wedges and a variety of

1 large tomato, seeded and
chopped
One-third cup finely
chopped celery
teaspoon salt
Peppy Celery Seed Dress

2 green peppers
Cherry tomatoes, for
garnish
Drain salmon and separate
into flakes with a fork. Com
bine with next six ingredients
and toss lightly with enough
Celery Seed Dressing to
moisten. Chill.
To assemble salads, cut
green peppers in half length
wise. Remove membrane and
seeds. Fill lightly with
salmon salad mixture.
Garnish with sliced cherry
tomatoes. Serve, fork and
knife style, with additional
celery seed dressing on the
side. Makes 4 salads.
PEPPY CELERY SEED
DRESSING
4 cup vegetable oil
4 cup evaporated milk
l 4 cup vinegar
*•« cup chili >auce or catsup
2 tablespoons minced onion
2 small cloves garlic,
minced
Mi teaspoon salt
teaspoon celery seed
Dash pepper
Combine ingredients and
chill one hour or longer to
allow flavors to blend. Makes
about IMs cups dressing.
HONEYED GRAPEFRUIT
SALAD DRESSING
6 tablespoons sugar
1 teaspoon paprika
Mi teaspoon salt
1 teaspoon fresh grated
grapefruit peel
2 tablespoons fresh
squeezed lemon juice
*4 cup fresh squeezed
grapefruit juice
6 tablespoons honey
1 cup salad oil
Combine all ingredients,
except oil, in a bowl. Add oil
in a thin steady stream while
beating constantly. Chill
thoroughly. Shake well before
serving. If using an electric
blender, add oil while whirl
ing mixture on low speed. For
salad plate, choose fresh
fruits in season, such as fresh
grapefruit sections, fresh
orange slices, strawberries,
avocado and pineapple
wedges and a variety of
melon. Pass the Honeyed
Grapefruit Dressing on the
side. Makes 2 cups.
CUCUMBER
YOGURT SALAD
2 medium cucumbers,
pared and thinly sliced
1 teaspoon salt
2 tablespoons tarragon
vinegar
1 tablespoon chopped fresh
dill
1 cup plain yogurt
1 clove crushed garlic
Sprinkle cucumbers with
salt and let stand for 20
minutes. Meanwhile, in a
small bowl mix remaining in
gredients. Add to cucumbers
and chill 1 hour before
serving. Makes: 4 to 6 serv
ings.
House refuses
rifle money
WASHINGTON (UPI) - The
House has refused to earmark
$233,000 to promote civilian rifle
practice. Opponents called the
proposal “a boondoggle for the
National Rifle Association.”
Rep. Sidney Yates, D-111.,
objected Tuesday to approving
the funds for the National
Board for Promotion of Civilian
Rifle Practice, which is located
in the Pentagon basement.
“This is a boondoggle for the
National Rifle Association,” he
commented during House de
bate on the Defense Depart
- ment’s s9l billion money bill.
“There’s no military use for
this money."
