Since I love yogurt in gravies such as Stroganoff, canned creamed soups and heated in many other ways can you tell me if the cultures (Lac tobacilli Acidophilus and Bulgaricus) remain active and continue to help the lower intestines when yogurt is cooked? I note that acidophilus capsules must be kept cold Since 1 would like to include these organisms in my diet and can use yogurt so many ways in cooking 1 want to make sure 1 am getting the same benefit from yogurt in cooking as from eating it directly from the refrigerator in the container DEAR READER - You are probably getting the same benefit from the organisms — cooked or uncooked — which is exactly nothing. The whole idea of eating yogurt for the colon began with an outstan ding scientist for his time. Elie Metchnikoff, a Russian who became head of the Pasteur Institute and a Nobel prize winner. His contributions to germ theory were the forerunners of modern knowledge of im mune mechanisms. He was in terested in aging and thought that “auto-intoxication” from the colon was an important factor in staying young. This resulted in many people hav ing their colons removed in the wave of interest in colons and disease that followed. He specifically recommended Lactobacillus bulgaricus yogurt to remove auto intoxication from the colon, and the yogurt faddists mul tiplied The lactobacillus may change the acid-base balance in the colon which can affect the types of bacteria living there but that is about all it POLLY'S POINTERS Polly Cramer Launder mildewed tablecloth POLLY’S PROBLEM DEAR POLLY — Do you know of anything that will remove mildew from a tablecloth I crocheted out of cot ton thread? DEAR POLLY — My Pet Peeve is with those people who ask one to baby sit at a certain time and then do not leave until an hour later and when they return only want to pay for the time they were gone. The sitter could be doing something else in the time spent waiting for them to leave so I feel they should pay from the time they asked the sitter to arrive. — SUSIE DEAR POLLY — I have help for the reader whose Pet Peeve concerned the poor quality material used to make pockets in men’s pants. A group of keys was playing havoc with pants pockets so eight years ago I started cutting pieces the size of the pockets from a sheet of iron-on "tape” and iron ed them on the pockets, on both sides, before the pants were ever worn. The pockets now outlast the pants. — EMILY. DEAR POLLY — I use petroleum jelly on water soaked leather shoes to make them pliable again. Rub it in with a cloth when shoes are dry, leave a thin film on for a while and when they are soft again rub off any excess. — ROSE. DEAR POLLY — My first grader often comes home from school with a word he has heard his schoolmates use in a vulgar way even though the word itself is not vulgar. He asks what this means so together we look it up in the dictionary, read the proper meaning and I explain to him in what context his schoolmates may have been using the word. This gives him some satisfaction and a balanced attitude and guidance in good speech. — JOYS. The cultured yogurt with Lactobacillus bulgaricus usually has less lactose in it and enables it to be digested by lactose intolerant people BUT most of the regular com mercial yogurt in grocery stores is made differently and is often a very high lactose food. Milk is not digested in the colon at all. The whole game is over by the time food residue gets to the coion. The function of the colon is to regulate salt and water balance. It absorbs water when you need it and if it is irritated you may have diarrhea because of its dis turbed function in absorbing water. If you enjoy yogurt, use it because you like it —- cooked or cold — but don’t expect any medical miracles from it either way.
