TO MAKF.TABLE JELLIES.-Use at least
two ounces of Cooper’s Retim'd American Isilig
lass, which should be lirsi soaked in cold wnterfor
two hour*; dram olFtltut water, then lake I wo quarts
of cold vvalei, one mid a ii ill' pound of sugar, put
in it the white of ilir*’c egg*, tho juice of three
good sized lemons, tho peal nf one, n stick of cin
namon. n liille nutmeg, orange peal, nr otbeT mice
in suit the tu*tc; stir all the ingredients well to
gelher while cold, then hod (lie whole mass four
or live minutes, mid then pour it through a Jelly
Bag. when it may he put into glasses or moulds,
and when cold, will he tit mr use. Tho moulds
should lie first wet with a little white of egg and
water, just before tho jelly is pul in them, in order
to make it ease to tom them out on plate*.
The Jelly B *g is made of flannel tf or 10 inches
across the opening, and about half a van! deep,
narrowing to a point at tho bottom. The liquid
that runs through first, should ho poured hack in
the jelly bag until it runs through clear.
Add one pint of wine to the above for Wine
Jelly. Other liquids inndc from preserves, may
he jellied by using (he same proportion ol’llio Is
inglass.
BLANC MANGE may be made hv using nt
least one ounce of'lsinglnss for two quarts of milk
nr cream, tins peal of two lemons sugar mid spice
to suit the taste—bring the whole to a hading
heal, strain il, mi l when nearly cool, stir it well to
