of cold watei, otto ami a half pound of sugar, put
in it the wliilo of three egg*, tlio juice of three
good sized lemons, tho peal of one, n stick of cin
namon.n little nutmeg, orange peal, or other spice
to suit tlm tat to; stir nil the ingredients well to
guthcr while cold, thou boil thu whole mass four
or five minutes! and then pour it through a Jolly
Bag, when it may bn put into glasses or moulds,
nml when cold, will ho fit. tor use. The tnonfds
should lie first wet with a little white ufegg nml
water, just before the jelly is put in.them, in order
lo make iteasv to turn them out on nlates.
The Jelly Baa is mule of flamml 8 or 10 inches
across thu opening, ami about half a yard deep,
narrowing to a ooint at tho bottom. The liquid
that riius through first, should he poured back in
thu jelly bag until it runs through clear.
Add one pint *f wine to thu above for Wine
Jelly. Other liquids mado' from preserves, nitty
bu jellied by using the same proportion of the Is-
inglasf.
BLANC MANGE may ho mado by using nt

nr cream, tho peal of two lemons, sugar and spice
to suit tho tusto—bring tlio whole to a boiling
heat, strain it, ami when nearly cool, stir it well to
mix the cream that will riso while cooling, pourit
in moulds,ami when perfectly cold, it may bo turn
ed nut nnd will then bo rondy for use. Tlio
moulds should be.first wui with cold water, which
