TO MAKKTABLR JELLIES —Use at least
two ounce* of Cooper'* Refined American Ling
Ti**. which should lie first *oakcd in cold water for
two hour*; drain offthat water, then take two quarts
of cold water, one and n half pound of sugar, put
in it the white of three eggs, the juicu of three
good sized lemons, the peal uf one, a stick of cin
namon,a littlo nutmeg, orange peal, nr other sjiice
to suit the tartr; stir all the ingredient* well to
geiltnr while cold, thou boil the whole mass four
or five minute*, and then pour it through a Jelly
Bog,'when it may be put into glasse* or mould*,
and when cold, will be fit r or use. The mould*
should he first wet with a little white ofegg and
water, just before tho jelly i* put iu them, in order
to mnko iteasv to turn iliem mu 011 plate*.
The Jelly Bag is made of flannel 8 or 10 inches
across tho opouiug, nml nlmut half a yard deep,
narrowing to a point at the bottom. The liquid
that runs through first, should I,,- poured hack in
llm jelly bag until il runs through clear.

Jolly. Other liquids mado from preserves, mav

least one ounce of Isinglass for two quarts of milk
or cronin. tho pool of two lemons sugar and spice

mix the cream that will rise while cooling, pour it
in moulds,and when perfectly cold, it may bo turn
ed nut and will then be ready for use. The
