two ounces of Cooper's Refined American Ling
lass, whirl)should he first soaked iu rold waterIbr

of cold watm, our and a half pound of sugar, put
in it the white of three egg., the juice of three
good lemons, the peal of one, a stick of ciu-
iiamon.it little nutmeg, orange pent, or other spice
to suit tbo tnite; stir nil tlm ingredients well to
gi'ther while cold, then Imil tho vvliolu mass four
or five minutes, ami timn pour it through a Jelly
Bag, when it mny ho put into glasses or moulds,
and when cold, will be fit for use. Tho moulds
should Im first vvut with a little white olYgg nod
water, just before the jelly is put in them, iu order
to make itensv to turn them out on plates.
Tho Jelly Bag is made of flannel rt or 10 inches
across the opening, nod about half a yard deep,
narrowing to n point at tbo bottom. 'The liquid
lliat run* through first, should hu poured hack in
tin* jelly bag until it rims through clear.
Add o.io pint of wine to ilm above for Wino
Jolly. Other liquid* made from preserves, may
