two ounces of Cooper’s Refined American Ling

of cold ivatci, ono and a half pound ui sugar, put
iu it tho white of tlir.-o egg*, tho juice of three
good sized lemons, tho penl of one, a stick ofein-
unumn,a little nutmeg, orange peal, or other spine
to suit the tattp; stir nil the ingredient* wull to
getlier while cold, thou boil iho whole mass four
or five minute*, and then pour it through u Jelly
Bag, when it may Im put into glasses nr moulds,
nntl when cold, wifi ho fit nr use. Tho mould*
should ho first wet with n little white ofegg and
water, just before the jelly is put in them, in order
to make iteusv to tutu ilium out on plate*.
The Jelly Bag is made of flannel 8 or 19 inches
across the opening, and nhoiit half a yard deep,
narrowing to n point nt tho bottom. The liquid

the jelly hag until it runs through clear.

boat, strain it, nud when nearly cool, stir it well to
mix the cream that will rise while cooling, pour it
in moulds,nnd when perfectly cold, it may ho turn
ed out nnd will then ho ready for two. The
moulds should he first wet with cold water, which
