The friends of Judge S. A. Douglas are in

My Dear Sir :—I have received your let
t. r. inquiring whether my friends are at
liberty to present iny name to the Cbarles
t n Convention for the Presidential nomin
ation. Before this question can be finally
determined, it will i>e necessary to under
hand distinctly upon what issues the canvass
hto be conducted. If, as I have full faith
th.-v will, the Democratic party shall deter- ,
mine in the Presidential election of IKW. to
adhere to the principles embodied in the
c nipromise measures of 1850, and ratified
(> tin* people in the Presidential election of
I*.'>2. and re-affirmed in the Kunsas-Xebras
ka act of 1H.4, and incorporated in the Cin
cinnati platform in ltC>ti, as expounded by
Mr. Buchanan it his letter accepting the
nomination, and approved by the jicople in

he at liberty to present my nnine to the Con
vention should they see proper to do so. If,
on the contrary, it shall become the poliev

anticipate, to repudiate these, their time

A Batch of Receipts.
TEA BISCUIT.
Mrs. E. L. Howard, of Darien, 0.,
writes; Having been much annoyed by
seeing so many g. od Cooks make rich
greasy, heavy biscuit, 1 suggest the fol
lowing: take 1 pint new* milk, 2 toft-*
spoonfuls cr am tartar, 1 of soda ami 1 of
*u!t; mixed imwlciately stiff, roll out a
bout 1 1-2 inches thick, cut it in cakes,
and let stand a short time by the stove
to rise. Instead of cream tartar, sour
milk may be used. The dough may be
made in small loves and baked as bread.
It shortening must be ustd,lake one-third
cream, more than this will prevent its
rising well.
GINGER SNAPS.
Good for cold snapping w*i at her, when
a body wants “something a little warm’ -
on along sleigh ride, or chopping in the
woods with snow knee deep, and the
thermometer below “Comfortable.”—
They also make a very pleasant aecom
panimeut for the children's cold dinners
which th**y carry t* sthiK.l; they are
what the writer's own mother used t<
give him ou such occasions, “long time
ago.” Here is the reeija*; l cup butter,
1 of molasses ; 1 of sugar ; 1 teaspoon
full saleratus, 1 tablespoonful git ger.
These should be well mixed with flour
enough to make them roll easily.—
Spread them thin with the roller, a little
thicker than pie-crust, divide into cakes
about as large as a tumbler would cut,
*®d bake in a quick oven.
DOUGH SITS NOT -‘CEAST.’’
Here is an ‘invention id* ‘our own’
which we might ‘patent,* but being em
ployed to labor for the public,*that public
i ■'.entitled to our entire‘services-’ Kvery
body and his wife—and partieultarly his
little folks, love the good old fashioned
dough nuts, or “nut-cakes,” or “crulers,”
or watever name you call them. But
many persons are troubled with ‘weak
digestion, (dyspepsia,) and the large a
hiount of lard or grease absorbed by the
SSl ‘- doughnuts does not always ‘set
w ell,’ but produces a ‘rising in the stoin
ach. \\ hen this is the case try our in
'ention. The dough nuts being prepar
ed as usual, just before immersing them
in the hot fat. plump them into a well
jeateo egg. This will give them a thin
coating of albumen which will keep out
th.- grease effectually. Furthermore

thiS coating will retain the moisture, and
make them keep in good condition much
longer than if not thus treated.—Eo.
SNOWBALL CCSTARD.

Heat the white of 3 or 4 eggs to a froth,
as you would to make frosting for cake.’
Then beat the yolks in a separate dish
and add to them 2 tablespoonsu Is if
gar, brown will answer. Heat over a
tire a quart of milk in a large “spider”
or shallow kettle. When it is scalding
hot, drop into the milk ti or 7 table ‘
spoonful Is, 1 at a time, of the whites.
Do not let the milk boil as this would
break the balls. In a few moments turn
them carefully, and w hen Cuoked lay of!
on a plate. Finish with the whites in
the same way. Next stir the yolks into
the milk, and continue stirring'for about
live minutes, do not allow it to boil.—
Pour this last into a deep dish, add a few
drops of essence lemon, vcmlla, or oth-
er flavoring, to suit the t&ste. Lay the
balls on this, and, help yourself.

purpose, and remove the core by cutting
from the end down into the m ddie, so
; to leave the apple w hole except where
the core has been removed. Place them
as near together as they can stand, with
1 the open part upward, in a deep earthen
1 pie dish. Next nuke a thin batter; us
- 1 quart of sweet milk, 3 eggs, with
sufficient flour, and pour it into a dish
around the apples, also filling the cuvitbs
in them; bake it in a quick oven. Eat
them with butter and sugar, but let not
their delicious taste make you forget the
bounds of prudence.
LEMON PIE.
G-ate the peel of a lemon and squeeze
the juice into it. Mix with it 1 cup of
water, 1 of sugar, 1 1 2 teaspoonfuls
com starch, and a lump of butter the
size of an egg. Roll the top crust ihin,
or cut it into strips and lay over the pie
cross'wise, as you would with a tart pie.

MIKCK ME AT —PRESERVING.
A lady r correspondent writes : I pre
pare mince meat for the entire Winter
and Spring, and preserve it in excellent
order by simply packing it solid jars and
covering the top with melted lard, which
entirely shuts out all access of air.—
AN hen a portion is required for use, the
cover is removed, and the desire quanti- j
ty of meat is taken out, when the remain
der is again packed smooth 0:1 the. top
and the remelted lard poured over. This
may or may not be new to some others,
but it is a long tried and approved meth
od with me.
MINCE PIE HINTS.
A lady friend of ours, says a friend of
hers, recently visited one of her friends,
and found some superior mince pies;
and on inquiry as to their manufacture,
derived one or two hints new to her.—
First, r.o wine, brandy, or other ingred
ient was used, but simply a mixture
of good molasses and water, with rose
water. Second, no suet or butter was
used, but instead, the beef was boiled
with fat pork, and the two chopped to
gether with the apples. “Other eondi- 1
ments or spicies as usual.” This third
handed information may be very good,
but we are not prepared to judge, being
a semi Israelite in regard to fat pork ;
and a Grahamite in regard to putting any
kind of meat in our apple pies.
HAMS CURED AND KEEPT IN A NEW WAV.
C. R. Palmer, of Susquehanna Cos., 1
Pa., writes : To the number of direc
tions for cui ing hams already given in
the Agriculturist, let me add ours, which
if once tritd, my word for it (or rather
my wife’s word) you will find it the best
way that hams were ever packed. For j
100 lbs. of hams, nake a brine of 8 lbs.
rock salt, 3 ounces of sa'tpetre. 3 pints
of molasses, and 4 gallons of water.
Let the hatns lie in this pickle three
weeks, and then take out and repack f
them, to expose every part to the brine.
Let them lie three weeks more, then
take out and dry them thoroughly and
smoke to your liking. Next cut them ,
in slices 1-2 inch thick, removing ihe
skin and bone. Pack the pieces as light
ly as possible in stone jars, and pour
over melted lard enough to cover the.
whole. If the care be taken, taking out
pieces for use. to cover the rest with the
. ‘aid, they will keep admirably, and the !
last pieces at the bottom of the jars will
be as fresh as w hen just smoked. [This
strikes us as an ffectual and valuable
plan. The lard will not be spoiled for
cooking purposes; and if the pieces be
well cl eared from lard, th*-re will be no j
more left upon them than will be needed 1

more than three months continuance, she
siitTered severely, but was never heard to
murmur. To the will of God she seemed eu
tirely resigned, and often referred to her ap
proaching end, but always spike of her de
parture a* “going home. t>he spoke fre
quently to her husband and others of hea
ven as “the better land/’ and seemed very
fond of the little volume bearing this name.
She was sjeechless for 3 weeks before her
death, but still gavcevidence, by signs, that
her trust in her Redeemer was unshaken.
But she is gone, and has left a heart stricken
husband, a sorrowing sister, and a large cir
cle of relatives and friends to mourn her loss.
. But while they drop the tear of sorrow, they
think of her as a rejoicing spirit in the world
