Remember when mother worked all morning preparing the picnic
lunch and after putting the finishing touches to the bowl of potato salad j
just had time to grab her hat and rush breathlessly to the car. v 1
Sometimes the work of preparing for these family outings takes all j
of the fun out of the picnic itself. Now, however, the sandwiches, salad,.
carrot sticks, strips of green pepper, celery—all of the time-consuming
food items—can be prepared at her leisure even the day before and
still be just as moist and tasty when taken out of the picnic basket,
thanks to a new transparent food wrap made of saran. It enables mother
to “beat the heat” and also aroid that last minute rush.
During the picnic the wrap serves as a protective, highly transparent
cover as it clings to the edge of the tray or bowl so that banus or strings
are unnecessary. It keeps foods appetizingly attractive and meets the
challenge of insects or dust. Each person simply lifts a section of the
saran, helps himself, and then tucks the material bacx again.
Potato salad, of course, is a traditional dish among picnic-going
Americans, and a home-made, boiled salad dressing will make the dish
even more flavorful.

2 tablespoons flour
1 tablespoon dry mustard
J 1 teaspoon salt
' ‘ % teaspoon pepper
Mix dry materials together in top of double boiler or heavy saucepan.
Beat eggs slightly; add water and vinegar, and blend into dry ingredi
ents. Cook, stirring constantly, until thickened. Remove from heat; add
butter and cool before using. 11 r*’:os about 1 pint. v.
It is best to cook the potatoes in their jackets; peel while warm and
put the salad together in alternating layers of sliced potato, salt and
pepper, minced onion, salad dressing and sliced, hard-cooked eggs. The
warm potatoes take on the flavor as they cool. Garnish the top with
egg slices and tuck leaf lettuce around the edge. Cover with the mois
ture-proof saran and l° l '‘■and at least an hour before serving.
