Church-going is one of the hallmarks of a pro

It is now time to conclude that the warning
of the Joint Chiefs several years ago-that 1954
would be a year of maximum danger from the
Communists-has been heeded and a dangerous
year completed without a new war.

SUGGESTIONS FOR FREEZING
BAKED PRODUCTS GIVEN BY
HOME DEMONSTRATION AGT.
Mix peach slices with one table
spoon of lemon juice or ascorbic
acid solution made by dissolving
one-fourth teaspoon ascorbic acid
to one tablespoon of water. Coat
berries or cherries with a mixture
of sugar and flour. Go light on
using spices, especially cloves, in
frozen pies. They have a way of
becoming bitter and of discoloring
frozen filling.
Don’t cut steam vents in the top
crust of unbaked pies until you
take them out of the freezer. Cut
the vents just before baking. They
can be baked without thawing. To
do this have the oven heated to
425 degrees. Bake for about 25
minutes. Then cut the heat to 375
degrees and finish baking. Allow
15 to 20 minutes extra baking time.
If pies are baked before freezing
cool them thoroughly before wrap
ping them. When it’s time to serve
them, thaw them in the original
wrapping at room temperature or
in an oven heated to 250 to 300 de
grees. Heat just long enough to
warm.
Have you tried freezing biscuits?
They can be frozen baked or un
baked. In either case, use standard
recipes. If you are planning to
freeze unbaked biscuits, use double
acting baking powder. Unbaked
dough, when rolled and cut, may
be stacked with double layers of
water-resistant material, such as
waxed paper, between biscuits.
Package them immediately in mois
ture-vapor proof containers and
freeze.
When you take them from the
freezer to bake, slide them into a
warm oven—about 300 degrees—
and let them thaw and begin to
rise. After about ten minutes in
the warm oven, finish baking them
in a hot oven—42s to 450 degrees.
If you bake your biscuits before
you freeze them, they should be
cooled, wrapped in aluminum foil
or other moisture-vapor proof pfiat
erial and frozen. Thaw them in a
slow oven for about 20 minutes.
