HD AGENT GIVES EIGHT HINTS
FOR COOKING TURKEY
The development of new, small
type junior turkeys with a dressed
weight from four to nine or ten
pounds has had much tto do with
increasing popularity of turkey on
the American table, Mrs. Zelma R.
Bannister, home demonstration
agent for Forsyth County, said to
day.
“Easter is now the third largest
turkey selling season of the year,”
the home demonstration agent ad
ded. She explained that Thanksgiv
ing and Christmas outrank Easter
as far as turkey sales are concern
ed.
Mrs. Bannister listed eight sug
gestions for preparing tender, cook
ed to perfection turkey.
1. If the turkey is frozen allow
it to thaw thoroughly. If it comes
in a plastic bag let it thaw inside
the bag.
2. After the bird is thawed, place
it brest down in a deep bowl and
rub the cavity with salt.
3. Put stuffing into the cavity,
being careful not to pack it tight
ly. Shake the bird to settle the
dressing.
4. Skewer the opening and lace
it shut with a cord. The drumsticks
should be tied tightly to the tail
and the skin thoroughly greased
with fat.
5. Cook the turkey breast down.
This lets the natural, flovorful oils
drip down from the back and per
meate the breast meat, making the
breast meat more succulent and
tasty.
6. To keep turkey from drying
out during the roasting process,
lay a fatmoistened cheese cloth
over it.
7. Turn the breast up during the
last hour of roasting.
8. Roast at a constant and mod
erate tempertature (325 degrees).
It is not necessary to add water
or cover the pan.
