Shellfish cooked in beer? It’s
wonderful. And, surprisingly,
most people won’t attribute the
extra tang and delicious result
to the ingredient that’s respon
sible unless the flavoring secret
is let out.
The recipe which follows sug
gests the use of frozen lobster
tails, but the same technique
could be used for shrimp. Serve
hot or cold with tall, frosty
glasses of beer, a big green salad
and a fresh fruit dessert.
LOBSTER A LA BIERE
2 11-ounce packages frozen
lobster tails
2 12-ounce bottles or cans
beer
2 cloves garlic, chopped
2 bay leaves
1 tablespoon dry mustard
1 teaspoon thyme

Vx teaspoon black pepper
Lc< lobster tails thaw at room *
temperature. Put beer and sea
sonings in a large saucepan.
Bring mixture to boil. Add lob
ster tails. Return to boil, then
reduce heat and simmer 10 to 12
minutes. If necessary, add water
or additional beer to cover lob
ster tails. Remove from cooking
liquid, and. when cool enough
to handle, split open tails by cut
ting lengthwise through the un
der shell. Serve hot with lemon
wedges and melted butter or
cold with any seafood salad
dressing. Makes 4 to 6 servings.
(For shrimp, allow 3 to 5 min
utes cooking time.)
