family, remember that good old stand-by, home-canned tomatoes.'
They’re delicious prepared a number of ways; and among the countless
tempting menu-spurkers are tomatoes with okra, tomato sauces and
soups, tomato rarebits, vegetable mixture, delicately flavored tomato
preserves, and those two faithfuls of the American table, tomato ketchup
and chili sauce. 35; ■. y ’f®
*v ‘The distinctive flavor of chili sauce adds a wonderful tang to a variety
of other foods: It may be combined with mayonnaise for a delicious
Russian dressing; mixed with horseradish for a racy seafood cocktail;
spread on hamburgers; or lend zest to a meal in countless other ways.
And you may vary the amount of spices in your chili sauce to achieve
a truly individual taste. Here’s a recipe for chili sauce, taken from the
ißall Blue Book, which you may like to try:
''' 1 gallon tomatoes 1 tablespoon mustard seed
h 2 cups chopped onions. 1 tablespoon celery seed
L 2 cups chopped red sweet peppers 3 tablespoons mixed spices
S 1 pod hot pepper 2H cups vinegar .
f 1 cup sugar 3 tablespoons salt
p- Wash and drain vegetables. Scald, core, peel and chop red-ripe toma
toes. Peel onions; remove seed from peppers; chop and measure. Mix
.all ingredient* except spices and vinegar. Boil 45 minutes. Add spices
((tied in bag). Boil until very thick, then add vinegar and boil until as
thick as wanted. (Taste; add more seasoning and sugar if wanted.)
Pour, boiling hot, into Ball Jars; seal at twice. s
Note: If preferred, hk of the sweet peppers may be green.

Air-Cooling Usually Cheaper
With ‘Wet Bulb’ Condenser*
The key to operating cost of
central home air conditioning is
the way used to dispose of the heat
taken out of the home. Heat dis
' posal is done by the system’s con
densing unit—and one type of
condenser may cost twice as much
as another to do the same cooling
jOb.
Sheldon Coleman, president of a
manufacturing firm that special
izes in air conditioning equipment
for the home, explains that four
kinds o'f condensers are in general
use—air-cooled (dry-bulb type),
air-cooled (wet-bulb type), cool
ing tower, and waste-water.
Mr.' Coleman rays, “In areas
where there is plenty of water,
where water rates are low, and
where there are no restrictions on
dumping the water after it is used,
a waste-water condenser usually
costs less to run. These conditions,
however, are found in very few
communities.
Water Consumption High »
“With this type of system, water
is drained off at an average rate of
90 gallons an hour for each ton of
refrigeration. Since a small- or
medium-size house will usually
have either a two-ton or three-ton
I system, the amount of water con
sumed may run between 43,200
and 64,800 gallons a month.
“An air-cooled system of the
; dry-bulb type eliminates water
bills, but it may substantially in
crease electric bills since the com-

SAFETY, a crop to be harvested
on every farm and in every home, is
. receiving special attention from more
than one-half million 4-H Club mem
■ bers taking part in the 1955 National
4-H Safety Program.
As a part of their 4-H Club work,
members in all 48 states are correcting
hazards such as those seen in the
above drawing. They are attempting
to reduce the Nation’s annual farm
toll of 14,500 lives, 1,250,000 injuries,
and an economic loss of about a
billion dollars.

j conduct surveys to locate hazards,
. then correct the unsafe conditions.

water conservation devices—the
cooling tower and air-cooled con
denser of the wet-bulb type. Both
re-use water over and over again.
The cooling tower, located outside,
cools the water by letting outside
air pass through it. However, dirt
and other debris in the air are col
lected by the water and are carried
along back with it to be trapped in
the refrigeration machine, neces
sitating periodic cleaning. ,
Water Re-used
“The air-cooled condenser or
the wet-bulb type—or evaporative
condenser—forces a fine spray of'
water across the coil to remove the
heat by evaporation. Aside from a
small amount lost through evapo
ration and a small amount allowed
to bleed off to carry away any air
borne debris, the water is used
over and over again.. Comparer
with a waste-water system’s use
of 90 gallons an hour for each ton
of refrigeration, the evaporative
condenser uses three gallons.
“The evaporative condenser
shows its greatest advantage in
areas where the temperatures are
high over long periods of time
However, as a general rule, it will
always give the cheapest operat
ing costs of any of the four sys
tems except where an ample sup
ply of cheap water is available for
a waste-water system and there
are no restrictions against dump
ing the used water ”

sion Service in conducting the 4-H
Safety Program, General Motors has
just published a new “4-H Safety
Handbook for Local Leaders,” which
provides how-to-do-it ideas for carry
mg out successful safety programs.
Copies of the manual will be distrib
uted to volunteer 4-H leaders through
County Extension Offices.
