Each year the last week in Oc
tober is celebrated as National
Honey Week, according to Mrs.
Zelma R. Bannister, HDA.
"Honey is an asset to the diet of
old and young alike,” she explained
“It is a natural food, chock full of
energy. It contains minerals which
help build good, rich blood, and it
supplies vitamins to keep you
healthy. It is a predigested food.
It also is a safe food, because bac
teria which cause diseases in hu
man beings cannot grow in it. For
a quick energy food it can’t be
beat, because its predisgested sug
ars are easily absorbed by the
body.”
The HD A said that W. E. Neville
apiiculturist for the Agricultural
Extension Service, reports that the
honey and beeswax produced in
Georgia last year amounted to a
little more than -1,000,000. “Even
more valuable than this, however,
is the fact that bees pollinated
more than 2,000,000 acres of crops
with a value of $24,000,000,” Neville
stated.
Mrs. Bannister suggested these
ways in which more honey can be
used in the daily diet.
Stir a spoonful of honey into a
glass of milk. Children can be en
couraged to drink more milk with
this added flavor and at the same
time you are adding food value to
their drink.
Mix one-half cup of honey, one
eighth teaspoon salt, one egg white
Beat until stiff and spread over
pie for a new, different flavor for
meringue.
Bake ham in the oven as usual.
About half an*hour before the ham
is done, remove it from the oven
and mark it with deep cross cuts.
Pour honey over the ham and then
baste it frequently during the bal
ance of the cooking time.
For a new flavor for baked ap
ples try this. Wash and core ap
ple. Leave part of the core in the
bottom to act as a plug. Fill the
cavity with honey. Bake in moder
ate oven.
For a wonderful ice cream treat,
pour honey over ice cream and
sprinkle crushed nuts on top.
Sweeten grapefruit with honey.
Heat honey slight'y. Pour over the
grapefruit and then broil the grape
fruit for just a minute or two.
For honey caramels, dissolve two
cups of sugar, one cup of milk,
and one half cup of honey. Cook
to a soft-ball stage stirring frequen
tlv. Add second cud of milk, cook
and stir to soft-abll stage again.
Add another cup of milk, four
tablespoons of butter, and one-half
teaspoon of salt, and cook to firm
ball stage, stirring constantly. Pour
into buttered pan. Mark into the
squares. And there you have it—
I honey caramels.
Personally, we are not afraid we will be struck
by lightning while attending church, especially
in clear weather.
