Easy Holiday Elegance
Glaze small onions with butter, brown sugar and roasted
diced almonds for an ideal turkey accompaniment So easy,
so elegant!
If your food store doesn’t carry roasted diced almonds, buy
whole natural almonds (skins on), chop coarsely and roast
in an oiled or buttered pan for about 7 minutes at 360 degrees.
Glazed Onions Almondine
IVS lbs. small white onions, 2 tablespoons brown sugar
peeled % cup roasted diced almonds
3 tablespoons butter
Cook onions in boiling salted water until fork-tender (about
25 minutes). Drain well. In saucepan, combine butter, brown
sugar and almonds. Cook, stirring occasionally, until butter
and sugar are melted. Add onions and heat through, turning
to glaze. Makes 5 or 6 servings.

ATLANTA (PRN) - How to Flame a Holiday Dessert.
Holiday “spirits” can soar the prestige of any dessert with
very little effort, if you’ll remember these 3 TRICKS:
First, when you plan to cook with liquors, buy the best, the
most expensive, the highest proof. Your dinner gueets won’t
become tipsy on your cooking creations. To the contrary, their
taste buds will be keen to food flavors and finely tuned to the
intricate patterns of every ingredient.
Second, when you cook with spirits you can afford to buy
the best because you don’t have to buy large quantities. In a
recipe, a little liquor goes a long way. Abo, the leftovers wtH
keep for years. Recap the bottles and store in a cool, dark place.
Third - the higher the proof, the more quickly it will flame.
Anything over 100 proof will ignite. However, 160 proof spirits
will guarantee instant success every time.
With the higher proof, you won’t have to “warm the brandy
in a spoon” as many recipes instruct Instead, just pour about
1/4 cup of your preferred flavor over the dessert. Strike a match
and light You’ll look like a pro as the flames burst up proudly,
at just the right moment of anticipation.
If you prefer a smaller flame, slightly soak a sugar cube in
whiskey. Place the cube on the dessert and light. As the flam*
dies, the sugar will melt into the food.
As the alcohol bums, the strong flavor of the whbkey
dissipates, leaving the warm, mellow richness of an aged
ingredient. And you the chef, basking in the glow of admiring
faces.
To serve large flaming desserts, wait until the flames die
down. Then divide the creation into portions. Individual
desserts can be flamed and set before each guest while still afire.
The culinarians at The Greenbrier in White Sulphur Springs,
West Virginia demonstrated this recipe for Crepinettes (French
Pancakes). You can make and freeze them ahead of time.
Reheat and flame with red cherry sauce for holiday festivities.
FLAMING CREPES
2 cups milk
3 eggs
1 Vt cups flour
dash salt, nutmeg
Mix ingredients and pour a little of the batter into a hot,
buttered pan. Let set like thin pancakes. Turn, browning very
little.
SAUCE
1 can cherry pie filling
2 Tablespoons rum or other spirits
At serving time mix and heat. Pour over hot, folded crepes
placed on heat proof serving platter. Dash with high proof rum.
Flame and serve.

cheese, grated
1/2 cup very finely chopped
mixed nuts, toasted
1/4 teaspoon Worcestershire
sauce
3 tablespoons dry sherry
1 ounce Roquefort cheese
Green pepper, cut in strips
DROMEDARY Pimientos,
Pods,,cut in stars
NABISCO Snack Crackers
Let cheese stand at room
temperature. Blend 3 ounces
cream cheese with next four
ingredients at medium speed
of electric mixer until
smooth. Shape into a ball;
wrap in aluminum foil. Re
frigerate at least 4 to 5 hours.
Remove foil. Blend remaining
8 ounces cream cheese and
Roquefort cheese until
smooth. Spread over ball; gar
nish with green pepper and
pimiento stars. Let stand at
room temperature for 1/2

FROSTED DEVILED
HAM BALL
1 (2Vi-ounce) can deviled ham
1 (8-ounce) package cream
cheese, softened, reserve a
few tablespoons
1/4 cup picallili relish
DROMEDARY Pimientos,
Sliced
1 (4V4-ounce) can deviled ham
NABISCO Snack Crackers
Turn 2Vi ounce can of deviled
ham onto center of serving
plate. Blend next two ingre
dients with 1 tablespoon
chopped pimiento; spread
over ham to form a ball.
Chill. Coat evenly with 4V4
ounce can ham. Garnish with
strips of pimiento and swirls
of cream cheese. Serve with
NABISCO Snack Crackers.
Makes about 2 cups spread.
