The most enjoyable outdoor
recreation is cooking and
serving a family barbecue. In
most cases, this gives the man
of the house an opportunity to
demonstrate his chef ability.
The first big decision to
make is what type of meat are
we going to prepare on the
outdoor grill. Good eating
requires the selection of top
quality meat. Steaks and chops
are usually thought about
when outdoor cookery is
mentioned, but many less
expensive cuts of meat can be
just as enjoyable.
Barbecuing is dry heat
cooking; therefore, rib, loin,
porterhouse, sirloin and chuck
steaks must be from top qual
ity beef showing ample
marbling. And these cuts must
come from young animals.
Pork shoulder cuts are
excellent when cooked on the
grill. Frankfurters, ground
beef, spare ribs, etc. might be
selected. All steaks, chops, and
ground meat patties should be
at least one inch thick so that
the finished product will be
juicy. Plan on six or eight
ounces per serving for adults
and three to four ounces for
children.
A barbecue grill can be
homemade from racks from an
old stove and concrete blocks
or stones. Most factory made
grills are portable with an
adjustable top. Some units are
more elaborate. Some even
include a revolving spit or a
cover.
In most cases, it is practical
to purchase charcoal brick
ettes; however, charcoal from
burned hardwood can be used.
Stack the brickettes in a
pyramid. Use a moderate
amount of charcoal lighter and
in 20 minutes the brickettes
should be gray. Don’t use
gasoline or kerosene.
When the brickettes are
gray, scatter them in the grill
so they do not touch each
other. A small amount of sand
under the glowing brickettes
will aid in preserving flare-up
during cooking.
Rub some fat from the meat
over the grill so that when the
meat is put on, it will not stick.

Baste most meats and turn
several times during cooking.
In case of flare-up, water can
be sprinkled on the brickettes
to cool down the fire. Choice
beef normally does not need
basting. All other cuts should
be basted with butter, mar
gerine or other mixtures to
prevent the meat from drying
out during cooking.
Rib roast, ham, pork
shoulders, chicken, turkey, etc.
can be cooked on a rotisserie.
Use a meat thermometer to
etermine degree of doneness.
40 degrees F. is rare; 150
egrees F. is medium rare; 160
iegrees F. is medium; 170
legrees F. is well done. All
resh pork and poultry should
be cooked to 170 degrees F.
Barbecue sauce containing
catsup should not be added to
the meat until it is cooked to
the degree of doneness desired.
Barbecue sauce containing

will usually char or burn before
the meat is cooked. Soaked
hardwood chips or wet hard
wood sawdust can be added to
the hot brickettes to obtain
additional smoked flavor.
A family barbecue cooked
outside at a lake or park gives
much enjoyment as well as
satisfactory eating. Outdoor
cookery is fun—try it; vou’ll
like it!
CANNED LAMB
Canned products containing
lamb will keep well in a cool,
dry place—storing lamb at too
high a temperature may cause
undesirable changes in color
and flavor, according to the U.
S. Department of Agriculture.
Under proper storage con
ditions, lamb products will
maintain quality up to a year.
SUB ZERO STORAGE
Frozen foods must be stored
at zero degrees Fahrenheit or
lower. University Extension
Service specialists in food
preservation say only in rare
cases should food be refrozen
once allowed to thaw out.
Meats, raw vegetables and
cooked foods may be refrozen
only if their temperature did
not exceed 32 degrees or
remain at this temperature for
longer than a few hours.

Tasty Do-It-Yourself Treats
To Keep Youngsters Busy

When the rush is on, let youngsters prepare their own afternoon
treats ... or at least a part of them. Start them off with a can of
Welch’s new instant grape drink that needs no more than mixing
with water. One small can makes a full quart of exciting grape
flavored drink enriched with vitamins. For snack food, bring out a
batch of fancy shaped sugar cookies that youngsters can make
sandwich style with fillings of their favorite jam, jelly or preserves.
Sugar Cookie
V* cup shortening (part butter)
% cup sugar
2 eggs
Va teaspoon vanilla
Combine shortening, sugar, eggs and flavoring; mix well. Sift
flour onto wax paper; spoon into measuring cup and level off with
knife. Blend flour, baking powder and salt; stir into butter mixture.
Chill 1 hour or more. Pre-heat oven to 400°F. Roll dough about
Va" thick on lightly floured board. Cut with 3" cookie cutters of
several designs. Place on ungreased cookie sheet. Bake 6-8
minutes. Cool. Spread half of the cookies with Welch’s assorted
jellies, jams and preserves. Top with remaining cookies. Makes
2 dozen sandwich cookies.

National Contest

who have already won in their

Georgia Agriculturist
Selects 1972-73 Staff
ATHENS—A freshman home
economics major from Jackson
has been named to head the
1972-73 staff of the University
of Georgia College of Agri
culture student magazine, the
Georgia Agriculturist.
Ellen Pinckney, who served
last year on the copy staff and
as managing editor of the
publication, assumes respon
sibilities as editor-in-chief with
the fall 1972 quarter.
Junior Hub Daniel, an
agricultural economics major
from Claxton, was selected to
serve as managing editor of the
Agriculturist. Sophomore Steve
Smith of Bremen takes a post
as assistant editor in the fall.
Smith is a forestry major.
The business staff will be
headed by Paul Eason of
Manassas, a junior in forestry.
The advertising manager will be
Coleman Hadden, a junior ag
economics major from Metter.
