HOMEMADE ICE CREAM
Smiles and quivers of anti
cipation always come when so
meone remembers churning
homemade ice cream on a warm
summer evening. Taking a turn
with the crank and eagerly aw
aiting the dasher to lick are
two favorite memories.
It hardly matters whether
you churn ice cream with the
flick of a switch or with old
fashioned elbow grease; old
fashioned homemade icecream
is still the family favorite.
Check these tips to insure ice
cream that is sure to please.
1. Select a recipe to give
the texture you like.
Ice creams vary in texture
from light, melt-in-your mouth
crystals to a richer, creamy
consistency. The recipe ingred
ients and method of prepara
tion determine the texture. Us
ually uncooked ice creams and
recipes containing relatively
small amounts of milk fat
and/or eggs will have a more
grainy texture; whereas those
with whipping cream and eggs
in large amounts and cooked
ice cream mixtures make sm
oother finished products. Also,
other things being equal, chur
ned ice cream will have a
smoother texture than unchur
ned.
The “why behind this is the
way in which the ice crystals
form during freezing. During
freezing, water, of course, fo
rms crystals. If there is cream,
eggs, or the mixture is cooked
before-hand, the ice crystals
will grow slowly and form small
crystals in large numbers, in
stead of fewer but faster form
ing crystals.
Dry milk solids added to
whole milk will enrich the mix
ture. The larger amounts of
solids reduce the quantity of
water available to form crys
tals. Also the thicker mixture
allows more air to be incor
porated which gives a smoother
texture.
2. If time allows, thoroughly
cook an ice cream mix after it
is prepared and if possible
keep it in the refrigerator for
a few hours or even overnight
before churning. This will im
prove the flavor and texture.
3. When a tub freezer is used
be sure that the lid, can, and

Suspension Rules
The Georgia Association of
Educators (GAE) Is on record
as opposing portions of a new
set of State Hoard of Education
rules pertaining to suspension,
revocation and denial of certi
ficates of certified teachers.
GAE raised several questions
In regard to the causes for re
vocation listed In the new rules
and regulations adopted Th
ursday, July 20, at a meeting
In Atlanta.
“Any violation of the rules or
policies of the State Hoard of
Education or any local unit of
school administration,’ ’ Is
listed as grounds for action.
“Wo believe the paragraph
Is far too broad,” GAE Execu
tive Secretary Carl V. Hodges
said. "Eor example, If a local

must attend I’TA meetings and
a particular teacher violates
tills policy, I would consider
seriously whether the severe

appropriate way to handle such
a situation.”

scraper are sterilized in boiling
water, that the lid fits properly,
and that melted ice does not seep
into the can.
4. Fill the freezer only three
fourths full of mix. Otherwise,
there’ll not be enough room for
the increased bulk caused by
whipping.
5. To pack freezer, allow app
roximately six parts ice to one
part of coarse rock salt.
Turn crank slowly till ice
partially melts and forms
brine - add more ice and salt
to maintain ice levels. Then
turn rapidly and constantly till
crank turns hard.
When the ice cream is fro
zen, remove the dasher and pack
the freezer with a mixture of
crushed ice and salt. (Four
parts ice to one part salt).
Cover with newspapers and let
stand about two hours to ripen.
You may ripen in freezer.
The cream should be smooth
when served, if it proves gran
ular, you used too much salt
in the packing mixture, over
filled the inner container with
the ice cream mixture or turned
too rapidly.
Vanilla Ice Cream
4 eggs
2 1/2 cups sugar
6 cups milk
4 cups light cream
2 tablespoons vanilla
1/2 teaspoon salt
Beat eggs until light. Add su
gar gradually, beating until
mixture thickens. Add remain
ing ingredients; mix thoroughly.
Freeze in ice-cream freezer.
Makes 1 gallon.
Strawberry Ice Cream
4 eggs
1 2/3 cups sugar
2 cups whipping cream
1 15-oz. can sweetened
condensed milk
2 16-oz package frozen
strawberries
4 cups milk
Beat eggs until ight. Add su
gar gradually, beating until
mixture thickens. Add re
maining ingredients, mix thor
oughly. Freeze in ice-cream
freezer. Makes 1 gallon.

"But in only two cases in the
entire study was it reported
that the man actually proposed
on bended knee.* One of these,
a young man, said, *1 did it
this way because that’s how I
thought it was supposed to be
done.”

of the determined type who cou
ched their words in a more
forceful and commanding man
ner: ‘We are going to get mar
ried!’ or *1 didn’t ask you IF

telling you WHEN.’”

the man’s concern was primar
ily for the young lady.
"In this case, he said, 'I
want to make you happy,’ ”
Dr. Cosneck reported. “All the
other proposals were either se
lf-centered or couple- cen
tered.”
Seventy-two per cent of first
proposals, were accepted, but
a second or third proposal was
necessary in 16 per cent of the
cases and the rest did not an
swer the question!
"Only four subjects stated t
hat the girl’s father was asked
for permission to the pro
posal,” Dr. Cosneck said.
Forty-five per cent of the
subjects said the proposal took
place in a car, at a party or
during some other social e
vent; 30 per cent, at the yo
ung lady’s home; 18 per cent
couldn’t remember. Other lo
cales were a church, an air
port, “by mail” and “over the
phone.”
Did the survey turn up any
case of feminine initiative? Did
SHE ask HIM?
“The woman proposed in nine
cases, ‘helped a little’ in four,
but most didn’t answer this,”
