BETTER FRESH?
The length of time between
harvest and sale is an impor
tant consideration when buy
ing fresh vegetables. When
they are in season, fresh
vegetables are usually the
best buy, say Extension Ser
vice specialists. But if they
bave been harvested and
then shipped long distances,
canned or frozen varieties
may be the better buy. In
most cases, canned and
frozen produce is processed
as soon after harvest as
possible, tmd this helps
preserve the nutrients.
