COUNTY EXTENSION AGENT
Thanks To Inspectors
We’re a trusting bunch of
people. Every since our life
styles changed so that we no
longer supply all our own
food for our families, like the
pioneers and settlers did,
we’ve had to trust stores and
sellers to give us wholesome
products.
In fact, we’re probably
better off than the families
who did everything for them
selves. They could make
mistakes an curing meat,
canning foods, or cooking
meals that could be fatal. Of
course, we can still make
some fatal cooking mistakes
ourselves, but we can
usually rest assured that the
food we buy is safe.
THANK THE INSPECTORS
Who do we have to thank
for that? Inspectors. U.S.
Department of Agriculture
inspectors have been on the
job Since 1906 protecting the
American consumer. They
begin their work while meat
food animals or poultry are
still alive. Animals that ap
pear sick are put aside for
further examination by vet
erinarians, who carefully ex
amine all parts of the
suspect animals before de
ciding whether the market
ing process may proceed.
After slaughter, all car
casses and their internal or
gans are scrutinized for
signs that would make them
unfit for human food. Inspec
tors also check slaughter
and processing facilities for
safe and sanitary conditions.

Today, over 8,000 federal
inspectors work in some 7,-
000 meat and poultry plants

800 members in 38 states and
Canada. Jennie Pullen,
Statesboro, district agent for
home economics, was.
named president of the
•Georgia Home Economics
Association at its annual
meeting in Savannah.

of processed meat and poul
try products such as hams,
bacon, frozen dinners and
soups are inspected each
year. Inspectors ensure
plant sanitation, correct re
frigeration and cooking tem
peratures.
Inspectors also check to
see that products contain
only wholesome and ap
proved ingredients in ap
proved formulations, and
that they are packaged,
marked and labeled prop
erly. Samples of finished
products are routinely sent
to laboratories to ensure
these requirements are met.
The purpose of these fed
eral inspectors is to protect
us when we can’t protect
ourselves.
Experimenting with a new

BARBECUED CHICKEN
SUPREME
Great on the grill
• 1 broiler-fryer chicken,
quartered
• V 4 cup catsup
• 2 tablespoons vinegar
• 1 cup chicken bouillon
• 2 tablespoons
Worcestershire sauce
• 2 tablespoons grated on
ion
• 1 teaspoon powdered
mustard
• 1 teaspoon garlic salt
• V 4 teaspoon pepper

Place chicken quarters in
shallow dish. In small sauce
pan mix together catsup, vi
negar, bouillon and
Worcestershire sauce; stir in
remaining ingredients and
bring to a boil. Pour hot
sauce over chicken and ma
rinate in refrigerator for at
least 2 hours. Place chicken
quarters on grill, skin side
up about 8 inches away from
coals or heat. Turn fre
quently; after 30 minutes
start basting generously
with sauce. Cook until fork
can be inserted into chicken
with ease. Makes 4 servings.
