Tips On Canning
Have you thought of can
ning but keep putting it off?
If so, perhaps these helpful
tips will make your first at
tempt a pleasant one.
Before starting, make sure
you have all the supplies and
a good recipe that you under
stand. Tested recipes are
contained in the Extension
Service book “So Easy to
Can.” For a free copy just
stop by the Extension office
and it’s yours for the asking.
With cabbage now being har
vested, consider making
some into sauerkraut for the
winter.
The equipment needed to
make homemade sauerkraut
includes: container for
washing cabbage, scales,
wooden spoon, large knife
for quartering cabbage,
plastic bag, kraut cutting
board, clean white muslin
doth or plastic cover, large
enameled, stainless steel or
aluminum pan, large clean
stone jars, crocks, or quart
jars, and a jar filled with
water for weight.
Follow these directions for
making Sauerkraut:
Select good, sound heads
of mature cabbage. Use 1
pound of salt with 40 pounds
of cabbage; 3 Mt tablespoons
with 5 pounds cabbage. One
pound fills 1 pint jar.
Work with about 5 pounds
of cabbage at one time.
Trim away outer leaves
and wash heads. Cut heads
m quarters and remove
cores. Shred or slice so
pieces are no thicker than a
dime. In a large container,
throughly mix 3 % table
spoons salt with 5 pounds
shredded cabbage, using
your hands. Let the salted
cabbage stand for 3 to 5
minutes before packing.
Transfer to large crock and
pack firmly with hands or
wooden spoon to release
brine. Repeat shredding,
salting and packing until
cabbage is 3 or 4 inches from
the top. If juice does not
cover cabbage, add additio
nal boiled and cooled brine
(1 % tablespoons salt per
quart of water). Place a
piece of plastic or clean
white, thin cloth over top and
tuck inside. Weight cabbage
down with a plate or heavy
plastic bag filled with brine.
Store at room temperature
(68 to 72 F) while cabbage is
fermenting. It will be nec
essary to check the kraut
daily for surface scum. Re
move scum and wash and
scald the cloth often to keep
it free from scum and mold.
Fermentation is complete
when bubbling ceases
(usually 10 to 12 days, longer
in cooler weather). Fully fer
mented kraut can be kept
covered in the refrigerator
for several months, or
canned as follows:
Canning Sauerkraut:
Bring kraut and liquid
slowly to a boil in a large
kettle, stirring frequently. If
there is not enough cabbage
liquid, heat 1 Ms tablespoons

salt to 1 quart water. Add to
kraut. Pack kraut firmly in
jars, leaving % inch head
space. Fill jar to within V 6
inch of top with boiling brine.
Adjust lids. Process in a boil
ing water bath.
Pints-15 Minutes.
Quarts-20 Minutes.
To make sauerkraut in
jars, follow these directions:
Select good, sound heads
of mature cabbage. Remove
outside green and dirty
leaves. Quarter the head and
shred the cabbage finely.
Measure 2 pounds of cab
bage for each quart and
throughly mix it with 4 tea*-
spoons salt. Pack the cab
bage solidly into jars,
leaving Vt inch head space.
Fill jar to withinVi inch of
top with cold water. Put on
cap, screwing band down
tightly. This will ferment for
3 to 4 days. When fermenta
tion ceases (bubbling stops),
wash outside of jars, tighten
screw band and process in a
boiling water bath for 20
minutes.
Problems may occur if the
recipe is not followed cor
rectly. To judge quality of
your sauerkraut, consider
these common causes of
spoilage.
Off-flavors and off-odors
develop when there is spoil
age in sauerkraut. This is
indicated by undersirable
color, off-odors, and soft tex
ture.
Soft Kraut: Softness in
sauerkraut may result from:
Insufficient salt; too high
temperatures during fer
mentation; uneven distribu
tion of salt; air pockets
caused by improper pack
ing. Pink Kraut: Pink color
in kraut is caused by growth
of certain types of yeast on
the surface of the kraut.
These may grow if there is
too much salt or an uneven
distribution of salt, or if the
kraut is improperly covered
or weighted during fermen
tation. Rotted Kraut: This
condition in kraut is usually
found at the surface where
the cabbage has not been
covered sufficiently to ex
clude air during fermenta
tion. Dark Kraut:
Darkness in kraut may be
caused by: Unwashed and
improperly trimmed cab
bage; insufficient juice to
cover fermenting cabbage;
uneven distribution of salt;
exposure to air; high tem
peratures during fermenta
tion, processing, and
storage; long storage period.
